    This delicious and simple Brown Rice Salad recipe makes the perfect side dish for your next BBQ and is also filling enough to enjoy as a meal on it’s own. The recipe can easily be doubled if you are feeding a crowd and is incredibly versatile too. Both regular and Thermomix instructions included.

    • Versatile – omit the cashews to make this salad nut free. You can also add extra vegetables if you wish.
    • Simple to prepare – the longest part of preparing this salad is waiting for the brown rice to cook!

    Ingredients:

    • Brown Rice – washed until the water runs clear.
    • Carrots – finely chopped
    • Spring Onion – finely chopped
    • Red Capsicum – finely chopped. Green Capsicum can also be used.
    • Cashews – can be omitted for a nut free version.
    • Currants
    • Honey
    • Soy Sauce

    How to Make Brown Rice Salad

    1. Cook the rice as per the instructions on the packet.

    2. Add the chopped vegetables, currants and cashews.

    3. Combine the honey and soy sauce and add to the salad. Gently stir to combine.

    Expert Tips:

    • I recommend rinsing the brown rice under a running tap to remove any residue.
    • Brown Rice takes longer than white rice to cook. If cooking in a Thermomix, it will take around 30 minutes to completely cook.
    • To bulk up this Brown Rice Salad, add extra vegetables or you can also add cooked bacon or chicken.
    • When making the marinade, heat the honey for 20 seconds in the microwave to make it easier to combine with the soy sauce.
    • The flavour of the marinade will increase over time, for best results prepare and place into the fridge one – two hours before serving.
    • This salad is best enjoyed within 3 days.

    Equipment

    • Large Serving Bowl

    Ingredients
      

    • 2 ½ cups brown rice 450 grams
    • 250 grams carrots finely chopped (approximately 4 carrots)
    • 1 red capsicum finely chopped (approximately 200 grams)
    • 6 spring onions finely chopped
    • 150 grams cashews
    • 200 grams currants
    • ½ cup honey
    • 4 tablespoon soy sauce

    Instructions
     

    • Rinse the brown rice under water until it runs clear.
    • Cook the brown rice as per the packet instructions.
    • Place the cooked brown rice in the serving bowl and add the finely chopped carrots, capsicum, spring onions, cashews and currants.
    • To make the dressing, place the honey in a microwave safe bowl and cook for 20 seconds. Add the soy sauce and mix to combine.
    • Pour the dressing over the salad and gently stir the ingredients through to combine and coat with dressing.

    Thermomix Instructions

    • Place the carrots (cut into 3cm pieces) into Thermomix bowl and mix for 4 seconds, speed 6.
    • Scrape down the sides of the bowl and add the capsicum (cut into strips) and spring onions (cut into quarters) and mix for 4 seconds speed 6. Scrape down the sides of the bowl and mix for a further 3 seconds, speed 6 if you wish to have smaller pieces. Transfer to salad serving bowl.
    • Place the brown rice into basket and place under running water until it runs clear.
    • In a clean Thermomix bowl, add 1200 grams of water before adding the basket with the rice.
    • Cook the rice for 20 minutes, Varoma temperature, speed 3.
    • Carefully remove the lid and gently stir the rice before cooking a further 15 minutes, Varoma temperature, speed 3 or until cooked.
    • Transfer the cooked rice (which has slightly cooled) to the serving bowl with the chopped vegetables and add the cashews and currants.
    • To make the dressing, place the honey in a microwave safe bowl and cook for 20 seconds. Add the soy sauce and mix to combine.
    • Pour the dressing over the salad and gently stir the ingredients through to combine and coat with dressing.
