    White Chocolate Rocky Road

    This delicious and easy White Chocolate Rocky Road is made with just SIX simple ingredients and takes less than 10 minutes to prepare! It is a great dessert or sweet treat and also makes the perfect homemade gift for family and friends. Both regular and Thermomix instructions included.

    It really doesn’t get easier than this white chocolate version of Rocky Road and it will quickly become your new favourite sweet treat!

    • Versatile – you can adapt the recipe to include the ingredients you have on hand or to accommodate preferences.
    • Make ahead – you can store this White Chocolate Rocky Road in the fridge for up to two weeks.
    • Homemade gift idea – pop a few pieces into a cellophane bag with a nice ribbon and you have a great homemade gift.

    Ingredients

    Please note you will find the full ingredient list and method in the recipe card below.

    • White Chocolate – I like to use a good quality white chocolate when making Rocky Road.
    • Marshmallows – you can use with regular or mini marshmallows for this recipe.
    • Pretzels – these help give the slice a yummy crunch. Either mini or regular sized pretzels can be used.
    • Pistachios – one 80g bag will be needed. You can substitute these for other nuts such as peanuts or almonds. Alternatively, they can be omitted.
    • Dried Cranberries – these can also be substituted with other dried fruits such as apricots or raisins.
    • Raspberry Lollies.

    How to Make White Chocolate Rocky Road:

    1. Combine the dry ingredients in a large bowl.

    2. Melt the white chocolate.

    3. Add the white chocolate to the bowl with the dried ingredients and stir through to combine.

    4. Transfer the mixture to an 18 x 28cm slice tin which has been lined with baking paper and place into the fridge to set.

    Expert Tips:

    • I recommend using a good quality white chocolate.
    • If using Cadbury ‘Dream’ Chocolate, you will need three blocks.
    • You can used either regular or mini marshmallows for this recipe.
    • Make sure you have combined the dry ingredient prior to melting the white chocolate.
    • I used an 18x28cm slice tin for this recipe, you can use different sized tins however please note the height of the Rocky Road will be different and the time it takes to set will alter.

    Rocky Road Variations:

    • Pistachios can be omitted or substituted with peanuts, almonds, macadamias etc.
    • Dried Apricots make a delicious alternative to dried cranberries.
    • Sprinkle the rocky road with 100s and 1000s.
    • Drizzle melted dark chocolate over the top (when set) for an extra indulgence.

    White Chocolate Rocky Road

    This easy White Chocolate Rocky Road is made with just six ingredients and takes less than 10 minutes to prepare.

    Equipment

    • 1 x 18x28cm Baking Tray
    • 1 x large bowl

    Ingredients
      

    • 540 grams white chocolate 3 x 180g blocks
    • 100 grams marshmallows 2 cups
    • 40 grams pretzels 1 cup
    • 80 grams pistachios one pack.
    • 60 grams dried cranberries ½ cup
    • 50 grams raspberries ¼ cup

    Instructions
     

    • Line an 18x28cm dish with baking paper.
    • Combine the dry ingredients in a large bowl.
    • Break the white chocolate into squares and place into a microwave safe bowl. Cook in 30 second spurts until the white chocolate has just melted.
    • Pour the melted chocolate into the bowl with the dry ingredients and mix to combine.
    • Transfer the mixture to the prepared dish and use a spoon to gently spread.
    • Place the rocky road into the fridge for 2 hours or until set before cutting into pieces.

    Thermomix Instructions

    • Line an 18x28cm dish with baking paper.
    • Break the chocolate into squares and place into your Thermomix bowl.  Blitz for 10 seconds on speed 8 before scraping down the sides.
    • Cook the chocolate for 2 minutes, 50 degrees, speed 1.
    • Scrape down the sides of the Thermomix bowl and cook the chocolate for a further 2 minutes, 50 degrees, speed 1 or until it has melted.
    • Add the dry ingredients to the Thermomix bowl and mix for 30 seconds, speed 3, reverse.
    • Scrape down the sides of your Thermomix bowl and mix for a further 30 seconds on speed 3 reverse, or until all of the ingredients are coated in chocolate.
    • Transfer the mixture to the prepared dish and use a spoon to gently spread.
    • Place the rocky road into the fridge for 2 hours or until set before cutting into pieces.
