    This classic Thermomix Zucchini Slice recipe is the ultimate budget friendly meal or snack, and best of it all, it can be ready in just 45 minutes! You can enjoy this easy Zucchini Slice either warm or cold, which also makes it a great lunch box snack.

    Zucchini Slice is one of my families favourite meals, and I love that not only is it a budget friendly meal, it is also super versatile.

    You will love:

    Don’t have any carrots? You can use sweet potato, capsicum or even leave it out completely.

    Quick to prepare – using a Thermomix makes this simple recipe even quicker to put together! It can be ready for the oven in around 5 minutes.

    Freezer friendly – store frozen slice in the fridge for up to three months.

    Family friendly – this classic Zucchini Slice is perfect for all ages to enjoy.

    Vegetarian option – omit the bacon for a vegetarian Zucchini Slice.

    One of the best things about this easy Zucchini Slice recipe is that it is made with simple and budget friendly ingredients. To make this slice, you will need: zucchini, brown onion, carrot, shortcut bacon (this can be omitted for a vegetarian version), garlic cloves, cheese, self-raising flour, eggs, salt and pepper.

    Please note you will need one large zucchini and two small carrots for this recipe. We also use 70gram Eggs in all of our recipes.

    Zucchini Slice Ingredients

    How to make Zucchini Slice in a Thermomix:

    Please note you will find the full instruction list in the recipe card below.

    Step 1. Place the cheese into the Thermomix bowl and mix until grated. Transfer to a separate bowl until needed.

    Step 2. Add the brown onion and garlic cloves and mix.

    Step 3. Add the zucchini and carrot and mix until finely grated.

    Step 4. Add the eggs, salt and pepper, self-raising flour, bacon pieces and approximately ¾ of the cheese and mix to combine.

    Step 5. Transfer to a lined slice tin and place into the oven to bake until golden and cooked through when tested with a skewer.

    Zucchini Slice Recipe Hints and Tips

    Either cheddar or tasty cheese can be used.

    You will need one large zucchini for this recipe.

    To make a vegetarian Zucchini Slice, simply omit the bacon.

    This slice can be baked in either an 18 x 23cm slice tin or a 20cm square container. I recommend checking the slice after 30 minutes of baking time.

    Store the cooked Zucchini Slice in an airtight container in the fridge for up to four days.

    To freeze, place into a freezer safe container and store for up to three months. You can also cut into pieces before freezing for an easy snack.

    Frequently Asked Questions

    Why is my Zucchini Slice soggy?

    There are a couple of reasons why your zucchini slice may be soggy. Firstly zucchinis have a high water content, and if you do not use the correct amount of flour, you will end up with a soggy slice. Secondly, it is important to follow the recipe and quantities of all ingredients as specified to ensure your slice comes together. If you notice your zucchinis are very ‘wet’, you can strain the excess water.

    Can you freeze Zucchini Slice?

    Yes you sure can! Zucchini Slice can be frozen for up to three months.

    Thermomix Zucchini Slice

    Equipment

    • 1 x 18 x 23 cm Slice Tin see notes

    Ingredients
      

    • 120 grams cheese
    • 80 grams brown onion cut in half
    • 2 cloves garlic
    • 150 grams zucchini roughly chopped
    • 80 grams carrots roughly chopped
    • 4 rashers short cut bacon
    • 150 grams self-raising flour
    • 5 Eggs
    • ¼ teaspoon salt
    • ⅛ tsp pepper

    Instructions
     

    • Preheat oven to 190 degrees celsius (fan-forced) and line an 18 x 28 cm slice tin with baking paper.
    • Place the cheese into the Thermomix bowl and mix for 8 seconds, speed 8 to grate. Transfer to a separate bowl and set aside until needed.
    • Without washing the bowl, add the brown onion and garlic cloves. Mix for 5 seconds, speed 5.
    • Scrape down the sides of the bowl and add the zucchini and carrot. Mix for 5 seconds, speed 5 to grate. Scrape down the sides of the bowl and mix for a further 5 seconds, speed 4 if you would prefer small pieces.
    • Add the eggs, bacon pieces, self-raising flour, approximately ¾ of the grated cheese, salt and pepper and nix for 15 seconds, speed 4, Reverse to combine.
    • Transfer the mixture to the prepared slice tin and gently smooth the surface. Sprinkle the reserved cheese over the top.
    • Place into the oven and bake for 35 – 40 minutes or until golden and cooked through when tested with a skewer.
    • Allow the slice to cool in the tin for 5 – 10 minutes before slicing into pieces.
