Preheat oven to 190 degrees celsius (fan-forced) and line an 18 x 28 cm slice tin with baking paper.
Place the cheese into the Thermomix bowl and mix for 8 seconds, speed 8 to grate. Transfer to a separate bowl and set aside until needed.
Without washing the bowl, add the brown onion and garlic cloves. Mix for 5 seconds, speed 5.
Scrape down the sides of the bowl and add the zucchini and carrot. Mix for 5 seconds, speed 5 to grate. Scrape down the sides of the bowl and mix for a further 5 seconds, speed 4 if you would prefer small pieces.
Add the eggs, bacon pieces, self-raising flour, approximately ¾ of the grated cheese, salt and pepper and nix for 15 seconds, speed 4, Reverse to combine.
Transfer the mixture to the prepared slice tin and gently smooth the surface. Sprinkle the reserved cheese over the top.
Place into the oven and bake for 35 - 40 minutes or until golden and cooked through when tested with a skewer.
Allow the slice to cool in the tin for 5 - 10 minutes before slicing into pieces.
