This Rice Bubbles and Honey Slice is a great alternative to store bought rice bubble bars – it can also be made regularly or using a Thermomix too!

You are going to love this easy melt and mix slice, it is just perfect to pop into the kids lunch boxes or enjoy as an afternoon snack.
What are Rice Bubbles?
Rice Bubbles (or Rice Krispies in the USA) are a breakfast cereal that make a ‘snap crackle and pop’ sound when milk is added to them. They will still have a slight crunch when mixed with the other ingredients of this recipe.
Are Rice Bubbles Healthy?
Rice Bubbles are certainly a better option than many other cereals as they have a fairly low sugar content, however they contain very little fibre.

Rice Bubbles and Honey Slice Ingredients:
To make this recipe, you will need just four ingredients:
- Rice Bubbles
- Honey
- Butter
- Desiccated Coconut
Tips for Making this Recipe:
- If making this recipe using the conventional method, make sure you use a large saucepan as you want it to be large enough to fit all of the other ingredients in.
- To make this slice a little sweeter, you can add ½ cup (110grams) of caster sugar when melting the butter and honey.
- This slice will be ready so slice after 2 hours in the fridge.
- To store, place in an airtight container and store in the fridge. This slice is best enjoyed within one week of making.

How many serves will you get from this recipe?
I usually cut this slice into small pieces and can get around 20 small pieces. however you can also cut it into thin bars to help it more closely resemble store bought bars – you will get around 12.

Rice Bubbles with Honey Slice
Equipment
- 28 x 18cm slice tin
Ingredients
- 125 grams butter
- 3 tablespoons honey
- 4 cups puffed rice cereal 120 grams
- ½ cup desiccated coconut 40 grams
Instructions
- Line an 18 x 28cm slice tin with baking paper, making sure to leave plenty of paper hanging over the sides to help you remove the slice once it has set.
- Place the honey and butter together in a large saucepan and bring to a slow boil. Cook for 5 minutes, stirring occassionally.
- Add the puffed rice cereal and coconut to the saucepan and mix to combine.
- Transfer the mixture to your prepared slice tin and press the slice down with the back of a spoon to flatten it. Place the slice into the fridge for 2 hours to firm.
- Cut into pieces to serve.
Thermomix Instrutions
- Line an 18 x 28cm slice tin with baking paper, making sure to leave plenty of paper hanging over the sides to help you remove the slice once it has set.
- Place the honey and butter (which has been cut into cubes) into your Thermomix bowl and cook for 3 minutes, 70 degrees, speed 2. If the butter hasn’t quite melted (this can happen depending on the temperature of the butter to begin with), cook for a further 1 minute, 70 degrees, speed 2.
- Add the rice bubbles and coconut and mix for 5 seconds, speed 4, REVERSE.
- Scrape down the sides of the bowl and mix for a further 3 seconds, speed 4, REVERSE to combine.
- Transfer the mixture to your prepared slice tin and press the slice down with the back of a spoon to flatten it. Place the slice into the fridge for 2 hours to firm and then cut into pieces.

Easy to make & yummy! However I found them falling apart easily. Which made a mess when my kids eat them or took them to school. So I’d need to maybe have more of the honey mixture next time & see if that helps

Thank you for this recipe… it’s so easy, and not too sweet (my husband doesn’t like super-sweet things). I had some reduced-sugar craisins that needed using up, so I tossed about half a cup of those into the mix too. Turned out well 🙂

Excellent! Quick and easy!
Made it with “unwanted anymore” choco rice bubbles – had a success! The only thing I omitted is boiling butter with the honey for 5 minutes. After 1 minute of boiling, the mixture started to carmelized, so I took it off.
