This melt and mix White Christmas Slice recipe is just like the one you grew up with!
If you are looking for a classic Australian Christmas recipe, you cannot go past this White Christmas Slice. It was a regular on Christmas party tables when I was growing up, and just quietly it was one of the few recipes I would eat that had dried fruit in it!
This is such a quick recipe to put together, the longest part is melting the copha which is what holds this slice together. I usually melt copha in a saucepan on the stove, however you can also melt in the microwave, just make sure you use a microwave safe bowl.
Along with being simple to make, another great feature of this recipe is that you don’t need many ingredients to put it together. You can also add a yummy twist by adding slivered almonds or pistachios to the mixture and for something truly decadent, you can also drizzle some melted dark chocolate over the top.

- Rice Bubbles
- Desiccated coconut
- Icing sugar
- Milk Powder
- Dried mixed fruit
- Copha
- Glacè cherries
- and you can also add some slivered almonds too.
Tips for Making White Christmas Slice:
- You can also place this slice in the freezer for half an hour to set quickly.
- For something extra special, you can drizzle some melted dark chocolate over the top of this slice.
- You can leave out the silvered almonds to make this slice nut free, alternatively you can also use a mixture of finely chopped almonds and pistachios.
- It’s important to let this slice set completely before cutting into pieces.
- Once cut, this slice is best stored in an airtight container in the fridge.

White Christmas Slice
Equipment
- 18 x 28cm slice tin
Ingredients
- 3 cups Rice Bubbles (or similar) 100 grams
- 1 cup desiccated coconut 85 grams
- ¾ cup icing sugar - sifted 110 grams
- 1 cup milk powder 120 grams
- 1 cup dried mixed fruit 175 100grams
- 250 grams copha
- 100 grams glace cherries chopped
- ⅓ cup silvered almonds approximately 80 grams - optional
Instructions
- Line the base and sides of your slice tin with baking paper.
- Roughly cut the copha into eighths and place into a small saucepan over a medium heat. Cook for 4 - 5 minutes or until melted.
- In the meantime, add the Rice Bubbles, coconut, icing sugar, milk powder, dried mixed fruit, and silvered almonds (if using) to a large bowl and stir to combine.
- Carefully pour the melted copha over the dry ingredients and mix to combine.
- Working quickly, pour the mixture into your prepared slice tin before sprinkling the glace cherries over the top.
- Place the slice into the fridge for 2 hours (or until set) and then cut into pieces. Store the slice in the fridge.
Thermomix Instructions
- Line the base and sides of your slice tin with baking paper.
- Roughly cut the copha into eighths and place into your Thermomix bowl. Cook for 4 minutes, 60 degrees, speed 2 to melt. If there are still solid pieces after the cooking time has elapsed, cook for a further 2 minutes or until melted.
- Add the Rice Bubbles, coconut, icing sugar, milk powder, dried mixed fruit, and silvered almonds (if using) to your Thermomix bowl and mix for 10 seconds, speed 2, reverse. You will need to use your spatula to push down the ingredients while the machine is mixing.
- Scrape down the sides of the bowl and mix for a further 6 seconds speed 2, reverse.
- Working quickly, pour the mixture into your prepared slice tin before sprinkling the glace cherries over the top.
- Place the slice into the fridge for 2 hours (or until set) and then cut into pieces. Store the slice in the fridge.
Notes
- You can also place this slice in the freezer for half an hour to set quickly.
