If you are looking for a classic Australian Christmas recipe, you cannot go past this White Christmas Slice. It was a regular on Christmas party tables when I was growing up, and just quietly it was one of the few recipes I would eat that had dried fruit in it!

    White Christmas Ingredients

To make this no bake Christmas Slice you will need: Rice Bubbles, desiccated coconut, icing sugar (pure, not mixture), milk powder, dried mixed fruit, glaze cherries and Copha to help bind it together.

Ingredients to make White Christmas on a bench top.

    How to Make White Christmas

    1. Melt the Copha

This is such a quick recipe to put together, the longest part is melting the copha which is what holds this slice together.  I usually melt copha in a small saucepan on the stove, however you can also melt in the microwave, just make sure you use a microwave safe bowl.

    2. Mix through remaining ingredients

Once the copha has been melted, place the remaining ingredients into a large mixing bowl and add the melted copha. Use a large spoon to gently stir until the ingredients have all combined and are covered with copha.

If you are making this recipe using a Thermomix, once the copha has been melted you can add the remaining ingredients. Make sure you select the ‘reverse’ function when mixing.

    3. Place White Christmas into baking dish

Once the ingredients have combined, transfer the mixture to a slice tin which is lined with baking paper and gently smooth the surface.

Along with being simple to make, another great feature of this recipe is that you don’t need many ingredients to put it together. You can also add a yummy twist by adding slivered almonds or pistachios to the mixture and for something truly decadent, you can also drizzle some melted dark chocolate over the top.

Tips for Making White Christmas Slice:

We recommend using desiccated coconut for this recipe as shredded coconut will impact the consistency of the slice.

You can place this slice into the freezer for half an hour to help it set quickly.

For something extra special, you can drizzle some melted dark chocolate over the top of this slice.

You may also wish to add almonds or pistachios to this White Christmas Slice.

It’s important to let this slice set completely before cutting into pieces.

Once cut, this slice is best stored in an airtight container in the fridge.
