- Shredded Chicken – you can use leftover roast chicken, precooked chicken or poach and shred your own.
- Mayonnaise – I recommend using a whole egg mayonnaise for best results.
- Celery
- Red Onion
- Salt and pepper.
How to Make this Chicken Sandwich Filling
- Place all of the ingredients into a large bowl.

Expert Tips
- You can use leftover BBQ chicken, precooked chicken or poach your own chicken. If poaching your own chicken, roughly chop 2 chicken breasts into pieces (4cm big) and cook in boiling water for 12 – 14 minutes or until cooked through when tested. While still warm, use two forks to shred the chicken.
- This recipe will make approximately 6 ‘regular’ sized sandwiches.
- This recipe can be doubled or halved depending on your needs.

- 1 large bowl
Ingredients
- 500 grams Chicken Breast Shredded See notes for options
- ½ cup Whole Egg Mayonnaise 130 grams
- 4 stalks celery
- 50 grams red onion ½ a red onion
- ½ teaspoon salt optional
- ⅛ teaspoon pepper optional
Instructions
- Finely chop the celery sticks and red onion and place into a large bowl.
- Add remaining ingredients and gently fold until all ingredients are combined.
- Add filling to favourite bread, rolls or wraps.
