My no bake Passionfruit Slice recipe is the perfect sweet treat! The slice base is made using just five ingredients and the delicious passionfruit icing couldn’t be easier to put together. This slice can be made a day or two in advance and both regular and Thermomix instructions included.
With a buttery biscuit and coconut base and tangy passionfruit icing, this no bake Passionfruit Slice is the perfect sweet treat for your next special occasion of simply just because! This recipe is a variation of my Lemon and Coconut Slice recipe, and just like the original, it’s also freezer friendly.

- Sweetened Condensed Milk
- Plain Biscuits
- Butter
- Lemon Zest
- Desiccated Coconut
- Passionfruit Pulp
- Icing Sugar
How to make Passionfruit Slice:
- Combine the melted butter and sweetened condensed milk.
2. Add the crushed biscuits, lemon zest and coconut.
3. Then transfer to your prepared baking tray.
4. Combine the icing ingredients.
5. Finally, add the icing to slice base and place into the fridge to set before cutting into pieces.
Tips for making this No Bake Passionfruit Slice Recipe:
- Depending on the size of your passionfruit and the amount of pulp they contain, you may need to add a teaspoon of water to your icing mixture to help it get to the right consistency.
- I use Marie Biscuits for this recipe, however you can also use any other plain biscuit.
- This slice is best stored in an airtight container in the fridge and enjoyed within 7 days.
Yes, you can freeze this slice either iced or before icing. Place it in a freezer safe container/bag and store for up to three months.
You can use either fresh passionfruit pulp, or store bought tinned pulp. If using store bought, you will need approximately 3 tablespoons.

No Bake Passionfruit Slice Recipe
Equipment
- 28 x 18cm slice tin
Ingredients
- ½ cup sweetened condensed milk 170 grams
- 125 grams butter melted
- 250 grams Marie Biscuits or similar plain biscuits
- 1 tablespoon lemon zest
- 1 cup desiccated coconut 85 grams
Passionfruit Icing
- 2 cups icing sugar 300 grams
- 3 passionfruit pulp only
- 20 grams butter softened
Instructions
- Line a 28 x 18cm slice tin with baking paper, making sure you leave paper hanging over the sides.
- Place the biscuits into a food processor and blitz until they are finely crushed.
- In a small bowl, add the condensed milk and melted butter and stir to combine.
- Place the crushed biscuits, lemon zest and coconut to the melted butter mixture into a large bowl and mix to combine.
- Pour the condensed milk and butter mixture into the bowl with the crushed biscuits and mix well to combine.
- Pour the mixture into your prepared slice tin and use the back of a spoon to press the mixture into the tin before placing it into the fridge for 30 minutes to chill.
- To make the passionfruit icing, place the icing sugar mixture, passionfruit pulp and butter into a small bowl and mix until it’s smooth.
- Pour the icing over the chilled slice base and use a butter knife to help spread it across the slice.
- Place the slice back into the fridge for three hours (or until the icing has set) before cutting into squares to enjoy.
Thermomix Instructions
- Line a 28 x 18cm slice tin with baking paper, making sure you leave paper hanging over the sides.
- Add the biscuits to your Thermomix bowl and mix for 10 seconds, speed 8 to crush. Transfer to a separate bowl until needed.
- Without washing the bowl, add the condensed milk and butter to your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2 or until melted and combined.
- Add the crushed biscuits, lemon zest and coconut to your Thermomix bowl and mix for 10 seconds, speed 4 to combine. Scrape down the sides of your bowl and mix for a further 5 seconds, speed 4 to combine.
- Pour the mixture into your prepared slice tin and use the back of a spoon to press the mixture into the tin before placing it into the fridge for 30 minutes to chill.
- To make the passionfruit icing, place the icing sugar, passionfruit pulp and butter into a clean Thermomix bowl and mix for 10 seconds on speed 3 to combine. If your icing is a little thick, add a teaspoon of water.
- Pour the icing over the chilled slice base and use a butter knife to help spread it across the slice.
- Place the slice back into the fridge for three hours (or until the icing has set) before cutting into squares to enjoy.

Hello. I am confused by steps 4 and 5 in traditional method. It mentions melted butter in both steps. I assume it just goes in wiht the condensed milk? Many thanks
