    These classic Freckle Biscuits are made using a few simple ingredients, and can be ready to enjoy in around 30 minutes! They are great for lunchboxes and they are also freezer friendly too.

    The combination of brightly coloured sprinkles resting on top of these buttery Freckle Biscuits make this recipe too hard to resist!

    A simple biscuit dough is key to this recipe, and it’s the same dough that I’ve also used with this Smartie Biscuits recipe. You can make the dough for these biscuits up to a day in advance, then you simply just need to bring it back to just under room temperature and continue with the recipe.

    Yes, you can freezer these biscuits for up to 2 months.

    Can you omit the Coconut in this recipe?

    Yes you can! I would suggest adding ½ a cup of plain flour in it’s place, you may need to add a little more to get a soft dough like consistency.

    You can find Chocolate Freckles in the confectionary aisle at your local supermarket.

    Equipment

    • 2 x baking trays

    Ingredients
      

    • 125 grams butter softened
    • 1 teaspoon vanilla essence
    • 1 cup brown sugar 180 grams
    • 2 eggs
    • 2 cups plain flour 300 grams
    • 1 teaspoon baking powder
    • 1 cup desiccated coconut 80 grams
    • 24 Freckle Lollies

    Instructions
     

    • Preheat your oven to 190 degrees celsius (fan-forced) and line two baking trays with paper.
    • In the bowl of an electric mixer add the softened butter, vanilla essence and brown sugar and mix until creamy. Beat in the eggs one at a time.
    • Remove the bowl from the mixing stand and sift the flour and baking powder over the mixture. Add the coconut and stir to combine.
    • Use a tablespoon to scoop up balls of the mixture before flattening slightly once on the tray. Repeat until you have used all of the mixture.
    • Gently press a Freckle lolly onto the top of the slightly flattened Freckle Biscuits to decorate before placing in the oven to to bake for 12 – 15 minutes or until the biscuits have turned light brown.
    • Let the biscuits cool on the baking trays for 5 minutes before carefully transferring to a wire rack to cool completely.

    Thermomix Instructions

    • Preheat your oven to 190 degrees celsius (fan-forced) and line two baking trays with paper.
    • Place the butter and caster sugar into your Thermomix bowl and mix for 30 seconds on speed 6.
    • Add the eggs and vanilla extract and mix for 20 seconds on speed 4 to combine.
    • Add the flour and baking powder and mix for 20 seconds on speed 4 or until combined. Stop after 10 seconds to scrape down the sides.
    • Scoop up tablespoon sized balls of the cookie mixture and place onto your prepared baking trays. Flatten the surface of the biscuits slightly and gently press a Freckle lolly into the centre before placing into the oven to bake for 12 – 15 minutes.
    • Carefully remove the Thermomix Freckle Biscuits from the oven and let them cool on the baking tray for 5 minutes before carefully transferring them to a wire rack to cool completely.

    Notes

    These biscuits are freezer friendly
    Store in an airtight container at room temperature and enjoy within 7 days

      Cookies were nice. 190 degrees is to high, cookies were burnt on the bottom at 12mins.
