This 4 Ingredient Clinkers Rocky Road takes celebrates the goodness of Clinkers by combining them with sweet raspberry lollies, marshmallows and milk chocolate – and only takes 10 minutes to prepare! Both regular and Thermomix instructions are included in the recipe card below.
This recipe really was an experiment in combining a few of my favourite sweets into one delicious (and kind of naughty) treat. While it doesn’t look fabulous, thanks to being packed full of (naughty) good stuff, I promise you won’t be able to stop yourself from trying just one (or two pieces) once it’s set.
What I also love about this Rocky Road recipe is that you will have a few Clinkers and Raspberries left over to enjoy while you are waiting for the Rocky Road to set – perfect!
This Rocky Road recipe can be made up to two weeks before it is needed, simply place into an airtight container and store in the fridge.
Clinkers Rocky Road Ingredients:

To make Clinkers Rocky Road, you will need: Clinkers (you can find these at your local supermarket in the lolly aisle), Marshmallows (either mini or regular size can be used), Raspberry Lollies and Chocolate. I prefer to use milk chocolate, however you can use dark chocolate if you prefer.
How to Make Rocky Road
Step 1. Cut the Clinkers in half and place into a large bowl. Add the marshmallows and raspberry lollies.
Step 2. Break the chocolate into squares and cook in the microwave in 30 seconds spurts until it has just melted.
Step 3. Add the melted chocolate to the bowl with the other ingredients and mix well to combine.
Step 4. Transfer the rocky road to a baking dish lined with baking paper. Gently smooth the surface.
Step 5. Place the Rocky Road into the fridge and leave for 2 – 3 hours or until set. Cut into pieces to serve.
Tips for Making Clinkers Rocky Road:
Either milk or dark chocolate can be used.
If using regular sized marsmallows, you may like to cut them in half first.
You can melt the chocolate for this recipe in your Thermomix, please see the cooking instructions below.
Thanks to a generous ratio of lollies to chocolate, it doesn’t take too long to set – 2 hours tops in the fridge.
You can make this recipe up to two weeks before you need it, simply store in an airtight container in the fridge.

4 Ingredient Clinkers Rocky Road
Equipment
- 1 x 18 x 28cm slice tin
Ingredients
- 200 grams Clinkers cut in half
- 150 grams Allen's Ripe Raspberry Lollies
- 50 grams Mini Marshmallows can substitute for regular marshmallows
- 220 grams Milk Chocolate
Instructions
- Cut the Clinkers in half and set aside until needed.
- Line a large loaf tin with baking paper – make sure you leave plenty of paper hanging over the sides to help you remove the Clinkers Rocky Road once it’s set.
- Place the Clinkers, Ripe Raspberries and marshmallows into a large bowl
- Place the milk chocolate into a microwave safe bowl and cook for 30 second spurts until it has just melted.
- Pour the melted chocolate into the bowl with the other ingredients and stir until everything has combined and is coated in chocolate.
- Pour the Clinkers Rocky Road into your prepared tin and place in the fridge for 2 hours or until set.
- Cut into large pieces and enjoy
Thermomix Instructions:
- Line a large loaf tin with baking paper – make sure you leave plenty of paper hanging over the sides to help you remove the Clinkers Rocky Road once it’s set.
- Break the milk chocolate into squares and place into your Thermomix bow. Blitz for 10 seconds on speed 8 before scraping down the sides.
- Cook the chocolate for 2 minutes, 50 degrees, speed 1.
- Scape down the sides of the Thermomix bowl and cook the chocolate for a further 2 minutes, 50 degrees, speed 1 or until it has melted.
- Add the Clinkers, Raspberries and mini marshmallows to your Thermomix bowl and mix for 30 seconds, speed 3, reverse.
- Scrape down the sides of your Thermomix bowl and mix for a further 30 seconds on speed 3 reverse, or until all of the ingredients are coated in chocolate.
- Pour the Clinkers Rocky Road into your prepared tin and place in the fridge for 2 hours or until set.
- Once set, cut into pieces and enjoy.
