Ingredients
Please note, you will find the full list of ingredients plus method in the recipe card below.
- Marie Biscuits – these can be substituted with any brand of plain sweet biscuits.
- Lemons.
- Desiccated Coconut – I do not recommend using shredded coconut for this recipe as it will impact the consistency of the slice.
- Sweetened Condensed Milk – you will need one tin.
- Butter – I use unsalted butter for this recipe.
- Icing Sugar – I suggest using pure icing sugar for a firmer consistency.
How to make Lemon and Coconut Slice in a Thermomix:
- Melt the butter
- Add the crushed biscuits
- Add the remaining ingredients and stir well – the mixture WILL be sticky.
- Transfer to your prepared slice tin and push down the the back of a spoon to flatten the surface.
- Combine the icing ingredients and pour over the surface of your slice.
- Pop the slice in the fridge for an hour or two until set.
Tips for Making this Recipe:
- Although I have used Arnott’s Marie Biscuits, you can use any type of plain/digestive biscuit for this Lemon Slice Recipe.
- I recommend only using desiccated coconut, shredded coconut will change the consistency of the slice.
- For a dairy free alternative, use Coconut Condensed Milk.
- Once combined, the mixture will be sticky. This is normal.
- I find the best way to flatten the slice in the tray is using the back on a metal spoon.
- I suggest using pure icing sugar for a firm icing.
- This slice is best stored in an airtight container in the fridge and enjoyed within 10 days.
- This Lemon Slice is freezer friendly – store for up to two months.

Equipment
- 18x28cm Slice Tin
- Thermomix
Ingredients
- 50 gras butter chopped into 4cm pieces
- 395 grams sweetened condensed milk
- 1 tablespoon lemon juice
- 250 grams Marie Biscuits see notes
- 40 grams desiccated coconut
Lemon icing
- 2 cups icing sugar
- 2 tablespoons lemon juice
- 1-2 teaspoons hot water
- ¼ cup desiccated coconut optional – to decorate
Instructions
- Line a slice tin with baking paper, making sure to leave paper hanging over the sides.
- Add the butter to your bowl and cook for 2 minutes at 60 degrees on speed 2 or until the butter has melted.
- Add the biscuits and crush for 5 seconds on speed 9.
- Scrape down the sides of the bowl and add the sweetened condensed milk, lemon juice and coconut and mix for 15 seconds on speed 5. Scrape down the sides of the Thermomix bowl and mix for a further 10 seconds, speed 4 or until combined. Use your spatula to help scrape the sides of your bowl mid way through mixing.
- Pour the mixture into your prepared slice tin and use the back of metal spoon to spread it across the tin.
To Make the Icing
- Place all the ingredients into your clean Thermomix bowl and mix for 30 seconds on speed 4. If your icing is too thick, add an extra ½ teaspoon of water to the mixture until it is a spreadable consistency.
- Pour the icing over the top of your slice and decorate it with the extra coconut.
- Place the slice into the fridge for 1 -2 hours or until set.

Is this suitable for freezing?
Lauren Matheson
Hi Rebecca, yes it sure is 🙂
Danielle
Do you freeze before icing or does it freeze iced?
Lauren Matheson
You can freeze either before or after icing 🙂

I make a similar receipe, but use orange rind in the mix and use butter, icing sugar and orange juice only for the icing. My family love it. I tried it with a lime once. Not as good but ok.
Sandra
Made this and the base is really wet .. I noticed this recipe has a lot more condensed milk than others. Are the quantities in this recipe right?
Lauren
Hi Sandra, Yes the quantities are right, I’ve always made this slice with a full can of condensed milk. The slice does firm up after it goes into the fridge, however if you are worried the mixture is too wet you could add a little extra coconut.
Sandra
Thanks Lauren .. Yes, it’s firmed up but still a bit raw tasting. I’ll try adding more coconut next time. Cheers
