    This simple Chicken Sandwich filling takes less than 15 minutes to prepare and will quickly become a family favourite! Perfect for picnics, parties, lunch boxes and everyday, you can store this chicken filling in the fridge for up to three days.

    Ingredients

    • Shredded Chicken – you can use leftover roast chicken, precooked chicken or poach and shred your own.
    • Mayonnaise – I recommend using a whole egg mayonnaise for best results.
    • Celery
    • Red Onion
    • Salt and pepper.

    How to Make this Chicken Sandwich Filling

    1. Place all of the ingredients into a large bowl.

    2. Gently mix until combined.

    3. Add the Chicken Sandwich Filling to your favourite bread, roll or wraps and enjoy!

    Expert Tips

    • You can use leftover BBQ chicken, precooked chicken or poach your own chicken. If poaching your own chicken, roughly chop 2 chicken breasts into pieces (4cm big) and cook in boiling water for 12 – 14 minutes or until cooked through when tested. While still warm, use two forks to shred the chicken.
    • This recipe will make approximately 6 ‘regular’ sized sandwiches. 
    • This recipe can be doubled or halved depending on your needs.
    • You can store this chicken sandwich filling in the fridge for up to three days.

    • 1 large bowl

    Ingredients
      

    • 500 grams Chicken Breast Shredded See notes for options
    • ½ cup Whole Egg Mayonnaise 130 grams
    • 4 stalks celery
    • 50 grams red onion ½ a red onion
    • ½ teaspoon salt optional
    • ⅛ teaspoon pepper optional

    Instructions
     

    • Finely chop the celery sticks and red onion and place into a large bowl.
    • Add remaining ingredients and gently fold until all ingredients are combined.
    • Add filling to favourite bread, rolls or wraps.
