Looking for the BEST Crispy Baked Potato Wedges? Well you have found them!
These crunchy Potato Wedges are on pretty high rotation in our house and you will usually find them on our table every week. We enjoy these wedges as a special treat after school, alongside Lasagna or a roast and even with my favourite guacamole.
The key to making these wedges nice and crunchy is to make sure that you don’t use too much oil. You just want them to be lightly coated and then cook them on a baking tray without any foil or baking paper underneath. If after 45 minutes your wedges are not crisping up, simply add another 10 minutes onto the cooking time as temperatures between different ovens will vary.
Tips for Making Crunchy Baked Potato Wedges:
- You can use any type of potato for this recipe.
- I leave the potato skin on, however you can remove it if you prefer.
- If using unwashed potatoes, after washing make sure you dry the potatoes well.
- It’s important not to use too much oil as this can also make the wedges go soggy.
- To cook, place on an unlined baking tray. This will also help the wedges to crisp up.
- The time it takes to cook your wedges may vary depending on the size. In this recipe, the wedges are no more than 5mm thick and approximately 5 – 6 cm long.
- You can double or half this recipe if you wish. The cooking time will vary.
- I use a crinkle cut knife for my wedges, however you can use a regular knife if that is what you have.
Where can I find a Crinkle Cut Knife?
I purchased our crinkle cut knife from our local supermarket a few years ago. You can also find them in homewares/kitchen stores or eBay.
Can I cook these wedges in an air fryer?
Yes you can! Just make sure your air fryer can cook the amount of potatoes you have cut up – otherwise you may need to cook your wedges in batches.
Crispy Baked Potato Wedges

- Baking Tray
Ingredients
- 1 kg potatoes
- 2 tablespoon extra virgin olive oil
- 1 tablespoon dried mixed herbs
- 1 teaspoon sweet paprika
- pinch salt
Instructions
- Preheat the oven to 220 degrees celsius (fan-forced).
- Slice your potatoes in half and cut into even sized wedges. Place into a large bowl.
- Place the olive oil, dried mixed herbs, sweet paprika and salt into a small bowl and mix to combine.
- Pour the oil mixture over the potato wedges and use a spoon (or your hands) to mix to coat.
- Place the wedges onto a large baking tray and place into your preheated oven.
- After 30 minutes of cooking time, carefully remove the tray from the oven and use pair of tongs to flip the wedges over before returning to the oven for a further 15 - 20 minutes or until the wedges are golden and cooked through.
- Remove the potato wedges carefully from the oven and serve.

These turned out really well! I bought a chip baking tray a couple of years ago that has holes in it and using this as well as reducing the oil I would normally use made a big difference to how crunchy they were 🙂

ohh great for movie time snacks. No my toddler is fine she takes a bite or two out fruit but not much my six year old is my problem he always has been.
