    This simple and delicious Honey Rice Bubble Slice is made with just FIVE ingredients! You are also going to love this minimal prep time for this no bake slice recipe. Both regular and Thermomix instructions included.

    Ingredients

    • Puffed Rice Cereal – Rice Bubbles were used to make the recipe pictured.
    • Honey
    • Butter
    • Caster Sugar
    • Desiccated Coconut – do not use shredded or flaked coconut for this recipe as the texture will be different.
    Ingredients to make Rice bubble Slice.

    Method

    Step 1. Line an 18cm x 28cm slice tin with baking paper.

    Step 2. Place the honey, caster sugar and butter in a large saucepan, and bring to a slow boil. Cook for 5 minutes, stirring occasionally. Turn the heat off.

    Melted butter, sugar and honey in a thermomix bowl.

    Step 3. Add the Rice Bubbles and coconut to the saucepan, and carefully mix to combine.

    Step 4. Transfer the mixture to your slice tin and flatten it by pressing down with the back of a spoon. Place the slice into the fridge for 2 hours to set.

    Step 5. Remove the slice from the fridge and cut into squares.

    Hints and Tips

    You can use any brand of puffed rice cereal.

    Do not use shredded or flaked coconut for this recipe, the consistency of the slice will be impacted.

    Store this Honey and Rice Bubble Slice in an airtight container and keep refrigerated. Consume within one week.

    • 1 x 18 x 28cm slice tray

    Ingredients
      

    • 3 tablespoon Honey
    • ¼ cup caster sugar 55 grams
    • 125 grams butter
    • 4 cups Rice Bubbles 120 grams
    • ½ cup desiccated coconut 40 grams

    Instructions
     

    • Line an 18cm x 28cm slice tin with baking paper, leaving paper hanging over the sides to assist removing the slice.
    • Place the honey, caster sugar and butter in a large saucepan, and bring to a slow boil. Cook for 5 minutes, stirring occasionally.
    • Add the rice bubbles and coconut to the saucepan, and carefully mix to combine.
    • Transfer the mixture to your slice tin and flatten it by pressing down with the back of a spoon. Place the slice into the fridge for 2 hours to set.
    • Cut into pieces to serve.

    Thermomix Instructions

    • Line an 18cm x 28cm slice tin with baking paper, leaving paper hanging over the sides to assist removing the slice.
    • Place the honey, caster sugar and butter into Thermomix bowl and cook for 3 minutes, 70 degrees, speed 2.
    • Add the rice bubbles and coconut and mix for 12 seconds, speed 2, reverse. you will also need to use the spatula to push the ingredients down towards the blades.
    • Transfer the mixture to your slice tin and flatten it by pressing down with the back of a spoon. Place the slice into the fridge for 2 hours to set.
    • Cut into pieces to serve
