    This easy Egg and Bacon Impossible Pie (Crustless Quiche) is made with just SIX simple ingredients and can be ready to enjoy within one hour. The combination of egg, bacon and cheese is always a winner and will be popular with the whole family. This recipe is also a great budget family dinner recipe and you can also freeze any leftovers. Both regular and Thermomix instructions included.

    Ingredients

    To make this Egg and Bacon Impossible Pie, you will need just six core ingredients for this recipe:

    • Cheese – I use tasty (cheddar) cheese for this recipe.
    • Bacon – You can use either shortcut of full bacon rashers for this recipe.
    • Milk – Full fat or skim milk can be used.

    How to Make an Egg and Bacon Impossible Pie

    1. Cook the bacon and onion.
    2. In the meantime, combine the eggs and milk with a little salt and pepper.
    3. In a baking dish, add the cooked bacon and onion pieces plus the grated cheese.
    4. Add the self raising flour and gently coat the remaining ingredients.
    5. Carefully pour the egg mixture over the top of the ingredients and place into the oven to bake until golden.

    Expert Tips for Making Egg and Bacon Impossible Pie\ Crustless Quiche

    • If you are running short of time, you can add the bacon and onion pieces uncooked, however cooking them does help to give the pie more flavour.
    • It is important to coat the bacon, onion and cheese with the self-raising flour as this is what helps the ingredients to not fall to the bottom of the pie dish.
    • I used 700 gram eggs, if your eggs are on the smaller side I suggest using five.
    • You can cook this pie in a pie maker.
    • If you have any leftover, this recipe can be frozen for up to three months.

    Egg and Bacon Impossible Pie

    This classic Egg and Bacon Impossible Pie (also known as a Crustless Quiche) is the perfect budget meal. It's made using six ingredients and can be ready in one hour.

    Equipment

    • Frying Pan
    • 5 cup capacity pie dish

    Ingredients
      

    • 5 rashers short cut bacon Roughly chopped
    • 1 brown onion
    • 1 & ½ cups tasty cheese grated
    • ⅓ cup self raising flour
    • 4 eggs
    • 1 & ½ cups milk
    • salt and pepper to taste
    • 3 sprigs of parsley optional

    Instructions
     

    • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced)
    • Dice the bacon and finely chop the brown onion before placing into a frying pan and cooking for 5 minutes over a medium heat until the onion turns translucent and the bacon begins to brown.
    • Add the cooked bacon and onion to a bowl along with the grated cheese and flour and mix until all the ingredients are coated in flour before seasoning with a little salt and pepper.
    • Scatter these ingredients across the base of the pie dish.
    • In a large jug, whisk together the eggs and milk before carefully pouring it over the mixture in the pie dish and garnish with parsley.
    • Place the pie into your preheated oven and bake for 40 minutes or until the pie has risen and is golden.

    Thermomix Instructions

    • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced)
    • Cut the cheese into 3 cm pieces and add to your Thermomix bowl. Mix for 6 seconds, speed 8 to grate. Set aside until needed.
    • Without washing the bowl, add the brown onion (cut in half) and mix for 3 seconds, speed 7 to grate.
    • Scrape down the sides of the Thermomix bowl and add the chopped bacon pieces plus 10 grams of olive oil and cook for 3 minutes, 100 degrees, speed 2.
    • Add the cooked bacon and onion to a large bowl along with the grated cheese and flour and mix until all the ingredients are coated in flour before seasoning with a little salt and pepper.
    • Scatter these ingredients across the base of the pie dish.
    • In a large jug, whisk together the eggs and milk before carefully pouring it over the mixture in the pie dish and garnish with parsley.
    • Place the pie into your preheated oven and bake for 40 minutes or until the pie has risen and is golden.

      I skip the flour and just make egg bakes with these ingredients and even by adding more sautéed cooled veggies to the container, adding egg mixture and gently mixing. Lovely without the need for flour.

      I thought that the recipe had too much milk as mine was still jiggly after 55 mins…..not happy.

        Hi Sharon, sorry to hear it didn’t work out. If you mixture was still ‘jiggly’ after 55 minutes I would be inclined to think your oven temperature may not be correct.

      I found this recipe today and I thought my husband would like it. I added some chopped roasted hatch chile peppers and some roasted garlic to it. I also had some dehydrated kale flakes and I added some of that to the egg mixture (got a little extra veggies in this recipe). To be safe, I added an extra 2 tablespoons of flour since I added the extra chile and garlic. I cooked it at 350 degrees for 55 minutes. Next time, I will cook it at 400 degrees.

      The verdict: It was awesome! It has already been requested to be made again.
