    Peanut Butter Biscuits

    These easy Peanut Butter Biscuits are so simple to make and you can be enjoying them within 30 minutes! You will only need a few basic ingredients to make these biscuits and they are a perfect afternoon tea treat. These biscuits can be made both conventionally and using a Thermomix and if you do happen to have any leftover, they are freezer friendly too.

    I recently went to make my Peanut Butter and Chocolate Chip Cookie recipe only to discover that we didn’t have any chocolate chips (thanks to my husband who likes to eat them straight from the bag!!) so I went in search of another peanut butter recipe that we could make.

    • Simple Ingredients – you probably already have most of these ingredients you need for this recipe!
    • Freezer friendly – these biscuits can be stored in the freezer for up to three months.

    How to Make these Peanut Butter Biscuits:

    1. Combine the butter, vanilla and sugars and mix until pale and creamy.
    2. Add the peanut butter and remaining ingredients and mix well to combine.
    3. Scoop the mixture up into balls and place onto a baking tray.
    4. Lightly press down on the biscuits with the back of a fork to make a criss cross pattern and bake until golden.

    Tips for Making Peanut Butter Biscuits

    • We used our Thermomix to make these biscuits, however they are also super simple to make conventionally too.
    • You will get around 36 biscuits when using a tablespoon to scoop the mixture. 
    • You can also make larger biscuits if you prefer, you will just need to give your biscuits a little bit longer in the oven.
    • Both the dough and the cooked biscuits can be frozen for up to three months.

    Equipment

    • 2 x baking trays

    Ingredients
      

    • 125 grams butter softened
    • ⅓ cup caster sugar 70 grams
    • ⅓ cup brown sugar 60 grams
    • 1 egg
    • 1 & ½ cups plain flour 225 grams
    • 1 teaspoon vanilla extract
    • ½ cup peanut butter 120 grams
    • 1 teaspoon bicarbonate of soda

    Instructions
     

    • Preheat your oven to 180 degrees celsius (fan-forced) and line two trays with baking paper.
    • Place the butter, vanilla extract, caster sugar and brown sugar into the bowl of an electric mixer and mix for 6 – 8 minutes until pale and fluffy.
    • Add the peanut butter and stir through.
    • Add the egg, plain flour and bicarbonate of soda and mix on a low speed until combined.
    • Use a tablespoon to scoop up the mixture and roll into balls. Place the balls onto your prepared baking tray and use a fork to lightly press down on the biscuits. Continue until all of the mixture has been used.
    • Place the biscuits into your pre-heated oven and bake for 12 – 14 minutes or until the begin to brown.  Carefully remove the trays from the oven and allow the biscuits to cool on them for 10 minutes before transferring to a wire rack to cool completely.

    • 80 grams caster sugar
    • 70 grams brown sugar
    • 1 egg
    • 225 grams plain flour
    • 1 teaspoon vanilla extract
    • 120 grams peanut butter
    • 1 teaspoon bicarbonate of soda

    Instructions
     

    • Preheat your oven to 180 degrees celsius (fan-forced) and line two trays with baking paper.
    • Place the butter, vanilla extract, caster sugar and brown sugar into your Thermomix bowl and mix for 30 seconds on speed 2.  Scrape down the sides of the bowl and mix for a further 20 seconds on speed 3 or until pale an creamy.
    • Add the peanut butter, egg, plain flour and bicarbonate of soda to your Thermomix bowl and mix for 12 seconds on speed 4 to combine.
    • Use a tablespoon to scoop up the mixture and roll into balls. Place the balls onto your prepared baking tray and use a fork to lightly press down on the biscuits. Continue until all of the mixture has been used.
    • Place the biscuits into your pre-heated oven and bake for 12 – 14 minutes or until the begin to brown.  Carefully remove the trays from the oven and allow the biscuits to cool on them for 10 minutes before transferring to a wire rack to cool completely.

      You have 125 grams of butter. I don’t know how much that is. Could you let me know how much that is please?
