Love Banana Cake? Well you’re in luck as this is the BEST Fluffy Banana Cake recipe out there – I promise!! This delicious Banana Cake is topped with a sweet and creamy Cream Cheese Frosting that no one will be able to resist. Both regular and Thermomix instructions included.
Although my Banana Bread recipe is always a favourite, for something a little different, this Fluffy Banana Cake with Cream Cheese Frosting is worth making.

Ingredients

- Bananas – the browner the better!
- Self-raising flour – you can substitute with plain flour and add 2 teaspoons of baking powder if needed.
- Butter – I use unsalted butter for this recipe
- Caster Sugar
- Eggs – I use 70gram eggs for this recipe.
- Milk – either full fat or skim milk can be used.
- Vanilla Extract – vanilla essence can also be used
- Bicarbonate of Soda
For the cream cheese frosting you will need:
- Cream cheese – softened
- Butter – I use unsalted
- Pure Icing Sugar
How to Make a Fluffy Banana Cake
- Combine the butter and sugar until pale and creamy.
- Add the banana, milk, eggs and vanilla extract and combine.
3. Add the flour and bicarb soda and combine.
4. Transfer the mixture to a prepared cake tin.
5. Bake until golden and cooked through when tested with a skewer.
6. Combine the cream cheese frosting ingredients and cover the cake.
Expert Tips:
- You will need 200 grams of bananas for this recipe. Please don’t be tempted to add more as it will change the texture of the cake.
- The browner the bananas the better! Brown bananas help to give this cake its sweetness.
- The baking time specified is for a 20cm round cake tin. You can use a different size/shape tin for your cake however please adjust the cooking time accordingly.
- It is important to let the cake completely cool before icing with the cream cheese frosting, otherwise the frosting will melt and slide off if the cake is still warm.
- It is important to use pure icing sugar for this recipe as this will help the frosting to hold its shape.
- The recipe for the cream cheese makes a generous amount, you can use the extra to add frosting to the middle of the cake (slice it in half) or cover the outside edges with frosting.
- Although we encourage you to top this cake with cream cheese frosting, you can also top it with a simple plain icing.
- This cake can be frozen (plain) for up to two months.

Fluffy Banana Cake with Cream Cheese Frosting
Equipment
- 1 x 20cm cake tin
- baking paper
- Hand Mixer or Thermomix
Ingredients
- 125 grams butter room temperature
- 150 grams caster sugar ¾ cup
- 200 grams bananas approximately 2 large bananas
- 2 eggs
- 1 teaspoon vanilla extract
- 30 grams milk 2 tablespoons
- 225 grams self raising flour 1 ½ cups
- ½ teaspoon bicarbonate of soda
Cream Cheese Frosting
- 250 grams cream cheese softened
- 180 grams butter softened
- 330 grams icing sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 170 degrees celsius (fan-forced) and line the base and sides of a 20cm round cake tin.
- Place the butter and sugar together in the bowl of an electric mixture and beat until they mixture is light and fluffy.
- Add the eggs to the creamed butter and sugar one at a time, make sure you beat each egg in well before the next addition.
- Remove the bowl for the electric mixer stand and sift in the flour and bicarbonate of soda.
- Add the mashed bananas, vanilla extract and milk and carefully fold through until the mixture has just combined.
- Spoon the cake mixture into prepared cake tin and bake for 45-50 minutes or until the cake is cooked when tested with a skewer
- When the cake has completely cooled, place the cream cheese frosting ingredients into a bowl and use an electric mixer to combine until smooth and creamy. Add the frosting to the cooled cake.
Thermomix Instructions
- Preheat your oven to 170 degrees celsius (fan-forced) and line the base and sides of a 20cm round cake tin.
- Place the softened butter and caster sugar into the TM bowl and mix on Speed 3 for 30 seconds. Scraped down the sides of the bowl and mix for a further 15 seconds, speed 4
- Add the eggs, banana, vanilla extract and milk and mix for 10 seconds, speed 5.
- Add the self-raising flour and bi-carb soda and mix for 10 seconds, speed 4.
- Scrape down the sides of the bowl and repeat for a further 5-10 seconds or until completely combined.
- Pour the mixture into the prepared tin and bake in the oven for 45 – 50 minutes or until golden on top and a skewer inserted into the middle comes out clean.
- When the cake has cooled completely, place the cream cheese, softened butter, pure icing sugar and vanilla extract into the TM bowl and mix on Speed 5 for 15 seconds.
- Spread the frosting over the top of the cake (or cut the cake in half and use half of the frosting for the middle and half for the top
