Ingredients:
To make this Lemon Slice, you will need:
- Plain/Digestive Biscuits – I use Arnott’s Marie Biscuits but any type of plain biscuit is fine.
- Sweetened condensed milk – you can also use coconut condensed milk as a substitute if you prefer.
- Lemon Juice – you can use either fresh or frozen lemon juice for this recipe.
How to Make Lemon Slice:
Making this No Bake Lemon Slice couldn’t be easier!
- Melt the butter
- Add the crushed biscuits – you can use a food processor or Thermomix to crush the biscuits or you can bang them with the end of a rolling pin too!
- Add the remaining ingredients and stir well – the mixture WILL be sticky.
- Transfer to your prepared slice tin and push down the the back of a spoon to flatten the surface.
- Combine the icing ingredients and pour over the surface of your slice.
- Pop the slice in the fridge for an hour or two until set.
Tips for Making No Bake Lemon Slice:
- You can use any type of plain/digestive biscuit for this recipe, I used Arnott’s Marie Biscuits in the recipe pictured.
- Coconut Condensed Milk can be used in place of Sweetened Condensed Milk if you wish.
- You can use a food processor, Thermomix or the end of a rolling pin to crush the biscuits.
- This slice is best stored in an airtight container in the fridge and enjoyed within 10 days.
Yes you can, to freeze, place in a freezer safe container and store for up to three months.
To make Lemon Icing you will need:
1 & ¾ cups of icing sugar
2 tablespoon Lemon Juice
1 -2 teaspoon boiling water
Combine the icing sugar and lemon juice and add a little water until the desired consistency is achieved.

No Bake Lemon Slice
Equipment
- 18x28cm Slice Tin
Ingredients
- 50 grams butter
- 395 grams sweetened condensed milk
- 1 tablespoon lemon juice
- 250 grams Marie Biscuits see notes
- ½ cup desiccated coconut 40 grams
Lemon Icing
- 1 ¾ cup icing sugar
- 2 tablespoons lemon juice
- 1 -2 teaspoon boiling water
Instructions
- Line a slice tin (18x28cm) with baking paper, ensuring you leave paper hanging over the sides to help remove the slice once set.
- Crush the biscuits and set aside until needed.
- Chop the butter into small pieces and cook in 30 second spurts in the microwave until just melted.
- In a large bowl, add crushed biscuits, melted butter and remaining slice ingredients and mix well to combine – please note the mixture will be sticky.
- Pour the mixture into the baking tray, and using metal spoon, push the mixture firmly and evenly across the tray.
Thermomix Instructions
- Line a slice tin (18x28cm) with baking paper, ensuring you leave paper hanging over the sides to help remove the slice once set.
- Place the biscuits inside your Thermomix bowl and crush for 5 seconds on speed 9. Pour the crushed biscuits into a separate bowl and set aside.
- Add the butter to your bowl (no need to clean it) and cook for 2 minutes at 60 degrees on speed 2.
- Add the condensed milk, lemon juice, coconut and biscuits to the bowl and mix for 15 seconds on speed 4, or until combined. Use your spatula to help scrape the sides of your bowl mid way through mixing.
- Pour the mixture into your prepared slice tin and use the bad of metal spoon to spread it across the tin.
Lemon Icing
- Place the icing sugar into a bowl and add the lemon juice.
- Slowly add the hot water until the desired icing consistency is achieved.
- Pour over the slice immediately and place in the fridge for 1 -2 hours or until set.
- Cut into small squares to serve.
