    Made with just four ingredients, you are going to love this easy Thermomix Lemon Curd recipe! Serve on top of homemade scones, add to your favourite cupcake recipe or simply enjoy straight from the jar.

    Ingredients

    Please note you will find a full list of ingredients and the cooking method in the recipe card below.

    • Eggs – you will need 4 eggs in total for this recipe. I use 70 gram eggs.
    • Lemons – approximately 3 – 4 lemons are needed for this recipe.
    • Caster Sugar – also known as super fine sugar.
    • Butter – I used unsalted butter for this recipe.

    How to Make Lemon Curd in a Thermomix

    Step 1. Grate the Lemon Zest.

    Step 2. Add the remaining ingredients and cook until thick and creamy.

    Step 3. Strain the Lemon Curd to remove the pieces of Lemon Zest. Please note this step is optional.

    Step 4. Transfer the Lemon Curd to a sterilised jar and refrigerate or freeze until needed.

    Expert Tips for Making Lemon Curd

    • You will need 3 to 4 lemons for this recipe.
    • The lemon curd will be runny when it has finished cooking, it will thicken as it cools.
    • Sieving the Lemon curd to remove the pieces of zest is optional.
    • To store, place in a sterilised jar and place into the fridge. Consume within 7 – 10 days.
    • Lemon Curd can be frozen for up to one year.

    Equipment

    • 1 x Thermomix
    • Sterilised Jars

    Ingredients
      

    • 2 Lemons – Zest Only
    • 2 Eggs
    • 2 Egg Yolks
    • 165 grams Caster Sugar
    • 80 grams unsalted butter
    • 90 grams Lemon Juice

    Instructions
     

    • Carefully remove the skin from two lemons. Place into Thermomix bowl and mix for 20 seconds, speed 9 or until finely grated.
    • Scrape down the sides of the bowl and add the eggs, egg yolks, caster sugar, butter and lemon juice.
    • Cook for 11 minutes, 80 degrees, speed 4. Please note the lemon curd will be a little runny and will thicken as it cools.
    • Optional – strain the cooked lemon curd to remove the pieces of lemon zest.
    • Transfer the lemon curd to sterilised jar and place into the fridge to store.

    Notes

      • You will need 3 to 4 lemons for this recipe.
      • The lemon curd will be runny when it has finished cooking, it will thicken as it cools. 
      • For a thicker curd, cook for an extra 2 minutes.
      • Sieving the Lemon curd to remove the pieces of zest is optional.
      • To store, place in a sterilised jar and place into the fridge. Consume within 7 – 10 days.
      • Lemon Curd can be frozen for up to one year.
