    Made with just FOUR ingredients, these healthy Apricot Bliss Balls make a great snack for the whole family AND they can be ready to enjoy in around 20 minutes! These Bliss Balls take no time at all to put together and can be made using a Food Processor or Thermomix. You can also make this recipe ahead of time and freeze the Bliss Balls until you are ready to enjoy them.

    Why you will love this recipe:

    • Four Ingredients – This healthy Apricot Bliss Ball recipe only requires a few ingredients and
    • Quick to make – these take no time at all to prepare, the longest part of the process is rolling the mixture into balls!  T
    • Versatile – this recipe will make around 24 Apricot Bliss Balls, however you can roll them smaller (use a teaspoon to scoop up the mixture) if you are wanting the mixture to go further – they are the perfect party food recipe!

    Bliss Ball Ingredients

    • Dried Apricots – you can use any type of dried apricots for this recipe. You can also use a mixture of apricots and sultanas if you wish.
    • Coconut – I prefer to use desiccated coconut for this recipe, shredded or flaked coconut will not combine as well with the apricots when blitzing the ingredients together.
    • Honey – you can also use rice malt syrup or maple syrup if you prefer.
    Ingredients to make Apricot Bliss Balls

    How to Make Apricot Bliss Balls

    1. Combine all of your ingredients in a food processor or Thermomix and blitz until the apricots have broken down and combined with the other ingredients.
    2. Use a teaspoon to scoop up the mixture and roll into balls.
    3. Roll the balls in the extra coconut and place onto a plate. Repeat until all of the mixture has been used.

    Tips for Making Bliss Balls:

    • The time it takes for the dried apricots to break down and combine with the other ingredients will vary depending on the appliance you are using.
    • These Bliss Balls can be enjoyed as soon as they have been made, however they will hold their shape better if chilled in the fridge.
    • To store, pop into an airtight container in your fridge.
    • This recipe is freezer friendly, so you can make a batch up in advance and then store them in the freezer until needed. This is also a great way to hide them from the kids to stop them from eating them all at once!!

    Apricot Bliss Balls Recipe

    Equipment

    • Food Processor or Thermomix

    Ingredients
      

    • 200 grams dried apricots
    • ½ cup almond meal 60 grams
    • 1 cup desiccated coconut 80 grams + 1 cup extra to roll the balls in
    • 3 tablespoon honey

    Instructions
     

    • Place the extra coconut into a bowl and set aside until needed.
    • Place all of the ingredients into a food processor and use the pulse function to blitz the ingredients together until the mixture begins to clump together. 
      If you are using a Thermomix, use the 2 second turbo function 4 – 5 times or until the mixture begins to stick together.
    • Use a spoon to scoop up the mixture and roll into balls before placing the bliss balls into the bowl with the extra coconut to coat.
    • Place the coated bliss balls into an airtight container and place into the fridge to chill for one hour. You can then store them in the fridge for up to one week.

    Notes

      These look yum! What could I use instead of almond meal? Almonds are on the no go list for a family member with severe nut allergies.

      Just a heads up these are nut free. Almond is classed as a seed not a nut and well coconut has the word nut in it but isn’t one.

        These look delicious. Any suggestions for the food processor part? I never have luck blitzing anything dense and sticky, it just ends up as a lump stuck on the blades and doesn’t further process/mix together the ingredients. There are so many recipes with dates that I cant try because of this.
