This Ham Cheese and Tomato Slice makes a great easy dinner or lunch box snack!
You will find this recipe on our meal plan pretty regularly, mainly because ALL of my kids will eat it (win!), it’s simple to make and it’s a great way to use up leftover ham from the week. It’s also an incredibly versatile recipe (after all, it’s based on my Zucchini Slice recipe) and you can also add vegetables to it as well.
This recipe can also be ready to eat within an hour, making it a great weeknight meal, or alternatively you can put it together in advance and enjoy it up to three days later.
Tips for Making my Easy Ham Cheese and Tomato Slice
- Don’t be too worried about the exact quantities of ham you use for this recipe, it’s fine to use less or more.
- You can also add leftover vegetables to this recipe, we love it with roast pumpkin and broccoli.
- To increase the veggie content, you can add a grated zucchini and/or carrot.
- To store, keep in the fridge for up to three days or freeze.

Easy Ham Cheese and Tomato Slice
This easy Ham Cheese and Tomato Slice makes a great midweek meal or lunch box snack for the kids. Both regular and Thermomix instructions included.
Equipment
- 1 x 28 x 18cm slice tin
Ingredients
- 1 cup tasty cheese grated - 100 grams
- 150 grams ham
- 1 tomato
- ⅓ cup extra virgin olive oil 70 grams
- 1 cup self raising flour 150 grams
- 5 eggs
- ½ teaspoon garlic powder
- ½ tablespoon onion flakes
Instructions
- Preheat your oven to 190°C (fan-forced) and line a 28 x 18cm slice tin with baking paper.
- Roughly chop the tomato and shaved ham into small pieces and place it on a plate with the grated cheese and set aside until needed.
- Crack the eggs into a large bowl and whisk.
- Add the extra virgin olive oil, garlic powder, onion flakes and self-raising flour and whisk until the mixture is smooth.
- Add the grated cheese, ham and tomato pieces you prepared earlier and use a spoon to stir the ingredients through the mixture.
- Transfer the mixture into your prepared tin and gently smooth the surface. You can also sprinkle a little extra grated cheese over the top of the slice if you like.
- Bake for 25 – 28 minutes or until golden on top and cooked through when tested with a skewer. Let the Ham, Cheese and Tomato Slice cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.
Thermomix Instructions
- Preheat your oven to 190°C (fan-forced) and line a 28 x 18cm slice tin with baking paper.
- Roughly chop the tomato and ham into pieces and set aside until needed.
- Place the cheese pieces into your Thermomix bowl and blitz for 10 seconds, speed 8 to grate.
- Scrape down the base and sides of your Thermomix bowl and add the olive oil, garlic powder, onion flakes and self-raising flour and eggs and mix for 15 seconds, speed 5.
- Add the ham and tomato pieces and mix for 10 seconds, speed 4 REVERSE.
- Transfer the mixture into your prepared tin and gently smooth the surface. You can also sprinkle a little extra grated cheese over the top of the slice if you like.
- Bake for 25 – 28 minutes or until golden on top and cooked through when tested with a skewer. Let the Ham, Cheese and Tomato Slice cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.
Notes
This recipe is freezer friendly.
You can add extra vegetables to this recipe if you like.
