    For a yummy snack, you can’t go wrong with this Seedy Muesli Slice! Both regular and Thermomix instructions included.

    This recipe is based on my Mum’s Muesli Slice that I have been making for years. In this version, I have upped the amount of seeds included in the mixture and also left out the nuts. The result is a filling and tasty slice that is one of our favourite snacks.

    When it comes to the ingredients in this slice, you certainly can substitute the seeds and dried fruits based on your preferences or what you have in the pantry!  I will often use currants or raisins in place of the sultanas and cranberries, and you can certainly switch the seeds for nuts if you prefer.

    • You can substitute the seeds and dried fruits in this recipe based on your preferences.
    • This is a ‘soft slice’, which means it is important to let it cool completely before slicing.
    • This slice is best stored in an airtight container for up to 7 days.

    Equipment

    • 28 x 18 cm slice tin

    Ingredients
      

    • ½ cup wheat germ
    • 1 cup rolled oats
    • ½ cup wholemeal flour
    • ½ cup cranberries
    • ½ cup sultanas
    • ½ cup sunflower seeds
    • ½ cup pepitas
    • ¼ cup black chia seeds
    • ¼ cup desiccated coconut
    • 125 grams butter
    • 1 tablespoon golden syrup
    • 2 eggs lightly beaten

    Instructions
     

    • Preheat your oven to 190 degrees celsius and line a slice tin with baking paper - making sure to leave paper hanging over the sides.
    • Place all of your dry ingredients into a large bowl and stir to combine.
    • In a small saucepan, melt the butter and golden syrup and stir to combine.
    • Pour the melted ingredients into the bowl with the dry ingredients, along with the eggs and stir well.
    • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to flatten the surface.
    • Place the slice into the oven and bake for 25 minutes or until golden brown.
    • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely. Once completely cooled, slice.

    Ingredients
      

    • 20 grams wheat germ
    • 110 grams rolled oats
    • 75 grams wholemeal flour
    • 70 grams cranberries
    • 70 grams sultanas
    • 40 grams sunflower seeds
    • 40 grams pepitas
    • 40 grams black chia seeds
    • 20 grams desiccated coconut
    • 125 grams butter
    • 1 tablespoon golden syrup
    • 2 eggs lightly beaten

    Instructions
     

    • Preheat your oven to 190 degrees celsius and line a slice tin with baking paper - making sure to leave paper hanging over the sides.
    • Place the butter and golden syrup into your Thermomix bowl and cook for 3 minutes 60 degrees, speed 2 to melt.
    • Add the remaining ingredients and mix for 10 seconds, speed 4 to combine. Scrape down the sides of the bowl and mix for a further 10 seconds, speed 4 REVERSE.
    • Tip the mixture into your prepared slice tray and press firmly with the back of a metal spoon to flatten the surface.
    • Place the slice into the oven and bake for 25 minutes or until golden brown.
    • Allow the slice to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely. Once completely cooled, slice.
