Made with simple ingredients, these easy Chicken Rissoles make a great midweek dinner – and they are freezer friendly too! These Chicken Rissoles are packed with veggies and will be a hit with your entire family.

We love rissoles in our house as they are an easy budget meal, I can use them to sneak extra veggies into the kids and I can easily double the batch to pop them into the freezer for an easy meal another time.
This recipe is VERY similar to our favourite Beef and Vegetable Rissoles, and you can make these either by buying chicken mince or mincing your own from chicken breast. You can add whatever vegetables you like to this recipe, we also enjoy them with grated sweet potato or even finely chopped baby spinach leaves.

Ingredients

- Chicken Mince
- Carrot
- Zucchini
- Garlic – either cloves or minced garlic can be used.
- Onion Flakes
- Sweet Chilli Sauce
- Soy Sauce
How to Make Chicken Rissoles.
Step 1. Grate the zucchini and carrot.
Step 2. Add the remaining ingredients and mix well to combine.
Step 3. Scoop up the mixture and shape into balls. Place onto a plate before popping into the fridge to chill.
Step 4. Cook the rissoles for 3 -4 minutes on each side or until golden and cooked through.
Step 5. Serve and enjoy!
Tips for Making these easy Chicken Rissoles:
You can use chicken mince or chicken breast pieces (which you can mince yourself) if making conventionally, or if you are making these in your Thermomix, the method will be the same.
It’s important to chill the mixture before cooking as this is what helps the patties to keep their shape.
This mixture will make approximately 10 patties. You can make them smaller/larger however the cooking time will change.
This recipe is freezer friendly.

You sure can! We prefer to use chicken breast and blitz in either a food processor or Thermomix until the desired consistency is achieved.
Chicken mince has a lower fat content compared to beef mince which can make it a healthier option.

Easy Chicken Rissoles
Equipment
- 1 x Frying Pan
Ingredients
- 500 grams chicken mince see notes
- 1 zucchini approximately 120 grams
- 1 carrot approximately 100 grams
- 2 cloves garlic
- 1 tablespoon onion flakes
- 1 tablespoon soy sauce
- 1 tbsp sweet chilli sauce
Instructions
- Grate the carrot and zucchini and place into a large bowl.
- Crush the garlic and add it along with the onion flakes and stir to combine.
- Add the chicken mince, soy sauce and sweet chilli sauce and mix well until combined. Place the bowl into the fridge to chill for one hour.
- Once chilled, scoop the mixture up using a spoon and shape into patties.
- Preheat your frying pan using a little olive oil (or ghee) and cook each pattie for 3 minutes on one side before flipping to cook for a further 2 minutes or until cooked through.
- Repeat until all of the mixture has been used.
Thermomix Method
- Place garlic cloves, carrot and zucchini pieces into your Thermomix bowl and mix for 6 seconds, speed 6 to grate.
- Add the chicken breast pieces , onion flakes, soy sauce and sweet chilli sauce and mix for 10 seconds, speed 5 to combine/mince.Scrape down the sides of your Thermomix bowl and mix for a further 5 seconds, speed 5 to mince the chicken completely and combine with the other ingredients.
- Transfer the Thermomix bowl to the fridge and let it chill for one hour.
- Once chilled, scoop the mixture up using a spoon and shape into patties.
- Preheat your frying pan using a little olive oil (or ghee) and cook each pattie for 3 minutes on one side before flipping to cook for a further 2 minutes or until cooked through.
- Repeat until all of the mixture has been used.

I made these as per recipe and chilled for 5 hours, however found the mixture was very wet and didn’t hold together, added flour which helped , think next time I will add potato and an egg

Hi Linda, Thanks for your feedback. The brand of chicken mince that you use can also impact the consistency as sometimes mince from the supermarket will have a higher water content.
