    Ingredients

    Please note you will find the full list of ingredients in the recipe card below.

    To make this recipe you will need: Eggs, Mayonnaise, Curry Powder and Chives. You may also wish to season your curry eggs with a pinch of salt and pepper.

    When making this recipe we use large eggs (approximately 70 grams) and also recommend using whole egg mayonnaise for extra flavour. If you would like a stronger curry kick you can use 1 ½ – 2 teaspoons of curry powder.

    How to Make Curried Eggs

    Step 1. Boil the eggs. This can be done either by placing the eggs in a saucepan filled with boiling water or by using the egg boiling function on your Thermomix.

    Step 2. Once cooked and slightly cooled, peel the eggs and cut in half. Place onto a plate.

    Step 3. Remove the egg yolk (I like to do this using a teaspoon) and place into a bowl (or your Thermomix if using).

    Step 4. Mash the egg yolks.

    Step 5. Finely chop the chives and add them to the mashed egg yolks along with the mayonnaise and curry powder. Mix well to combine.

    Step 6. Place the curry mixture into a ziplock bag (or piping bag) and cut the end off. Pipe the mixture into the egg whites.

    Step 7. Garnish with chives (optional) and serve!

    Recipe Hints and Tips

    This recipe can be doubled or halved depending on your needs.

    You can make these Curried Eggs a day in advance. Enjoy within three days and store in an airtight container in the fridge.

    I use either a piping bag or a ziplock bag with the corner cut to pipe the curried egg mixture. You can also use a teaspoon to add the curried yolk mixture into the eggs.

    If using a decorative tip when piping, ensure the egg yolks are completely mashed, as otherwise they will block the tip

    How long do curried eggs last?

    When stored in an airtight container (or covered with cling wrap) in the fridge, curried eggs will last up to three days.

    How do you boil eggs so that they are easy to peel?

    Let the water reach its boiling point before adding the eggs. Also the addition of a tablespoon of vinegar to the boiling water will help make hard boiled eggs easier to peel.

    Equipment

    • 1 x Saucepan
    • 1 x fork/potato masher
    • 1 x piping bag

    Ingredients
      

    • 8 Eggs 70 gram eggs
    • 80 grams Whole Egg Mayonnaise
    • 1 teaspoon mild curry powder Keen's Curry Powder or similar
    • 2 tablespoon chives finely chopped
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper

    Instructions
     

    • Bring a saucepan of water to the boil. Add the eggs and cook for 9 minutes.
    • Cool the eggs under cold running water. Once cool, peel and cut in half.
    • Use a teaspoon to carefully remove the egg yolks and set aside.
    • Mash the egg yolks before adding the mayonnaise, curry powder, salt/pepper and chives.
    • Transfer the mixture to a piping bag and pipe back into the eggs.
    • Garnish with extra chives if desired and serve.

    Thermomix Instructions

    • Use the 'egg' function on your machine to hardboil the eggs.
    • Cool the eggs under cold running water. Once cool, peel and cut in half.
    • Use a teaspoon to carefully remove the egg yolks and set aside.
    • insert the butterfly attachment and add the egg yolks, mayonnaise, curry powder and salt and pepper. Mix for 15 seconds, speed 3.
    • Scrape down the sides of the bowl and add the chives. Mix for a further 5 seconds, speed 3. Follow instructions from Step 5 above.
