    If you loved my Cauliflower Fritter recipe, these Broccoli and Bacon Fritters are for you! These delicious and simple fritters are packed with flavour and can be ready to enjoy in under 30 minutes. Both regular and Thermomix instructions are included.

    When we had an oversupply of broccoli recently, I decided that it was time to finally try this Broccoli Bacon and Cheese Fritter recipe that I’ve been thinking about for ages now!  This recipe is pretty much the same as my Cauliflower Bacon and Cheese Fritters but I’ve just used broccoli instead of cauliflower and have omitted the zucchini, however you could easily add zucchini to this recipe too and I think I will next time.

    Broccoli Bacon and Cheese Fritters Recipe - also includes Thermomix instructions

    You will love:

    Packed with veggies – these Fritters are made with two heads of broccoli. You could also easily sneak some extra veggies into these as well.

    Vary the size – You can vary the size of the fritters you make to suit your needs, if packing in lunchboxes use a teaspoon of mixture to make smaller fritters.

    Freezer friendly – freeze these Broccoli and Bacon Fritters for up to three months.

    Vegetarian Option – If you would like to make a vegetarian version of this recipe, simply leave out the bacon!

    Recipe Hints and Tips

    It is important to note that the amount of water you need when making this recipe will vary, if your broccoli is a bit older and on the drier side (which is completely fine!) you may need closer to one cup of water.

    Freeze these fritters for up to three months.

    Broccoli Bacon and Cheese Fritters

    These easy Broccoli Bacon and Cheese Fritters are simple to make and a great way to get some vegetables into the kids. They make a yummy light meal or snack and are perfect for the lunchbox too. They are freezer friendly and can also be made using a Thermomix.

    Equipment

    • 1 x Frying Pan

    Ingredients
      

    • 400 grams broccoli stalk removed & cut into small florets.
    • 120 grams short cut bacon 4 rashers – cut into small pieces.
    • 2 cups self raising flour 300g
    • 1 cup parmesan cheese 70g – finely grated
    • ½ cup tasty cheese 50g – grated
    • 1 garlic clove – crushed
    • 1 teaspoon onion flakes
    • 2 eggs – lightly beaten
    • ¾ cup water 175g
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 2 tablespoon olive oil to shallow fry

    Instructions
     

    • Place the broccoli florets into a food processor and blitz until they turn into small pieces. Transfer to a large bowl.
    • Add the crushed garlic, onion flakes, chopped bacon, parmesan cheese and tasty cheese to the bowl with the broccoli and add the self raising flour before stirring well to combine.
    • Beat the eggs in a small bowl lightly with a fork and add salt and pepper to taste. Add the eggs along with ¼ cup of water to the bowl with the broccoli mixture and stir. Gradually add the extra water and stir until you have a thick batter – please note you may not need all of the water/or need extra depending on the water content of the broccoli you have used.
    • Heat a tablespoon of olive oil in a large frying pan over a medium to high heat and use a ¼ measuring cup to scoop up the batter and place the fritter mixture into your pan. Use a spoon to gently spread the mixture into a circle between ½cm – 1cm thick. You should be able to fit approximately six fritters (or even more depending on the size of your pan) into your frying pan.
    • Cook the Fritters for 5 minutes on each side until they are crisp and golden brown before transferring to a plate and covering them with foil so they stay warm while you cook the next batch. Repeat until all the mixture has been used.

    Thermomix Instructions

    • Place the parmesan and tasty cheese which has been cut into 3cm chunks into your Thermomix bowl and mix for 7 seconds on speed 9 to grate. Transfer to a separate bowl until needed.
    • Without washing the bowl, place the bacon into your Thermomix bowl and mix for 4 seconds on speed 6. If you would like it cut into smaller pieces, mix for a further 2 seconds. Transfer to the bowl with the grated cheese.
    • Without washing the bowl, add the broccoli florets, garlic clove and onion flakes to your Thermomix bowl and mix for 7 seconds on speed 8 or until finely cut.  If there are still large pieces in your Thermomix bowl, scrape the sides and blitz for a further 3 seconds on speed 6.
    • Add the grated cheeses and bacon, along with 2 eggs, 300g of self raising flour, and HALF a cup of water to your Thermomix bowl in that order – please note you may not need all of the water depending on the moisture content/size of broccoli used. Mix for 15 seconds on speed 4 REVERSE to combine the ingredients. Scrape down the sides of the bowl and if your mixture is still a little dry, add the remaining ¼ cup of water and mix for a further 15 seconds on speed 4 REVERSE or until combined.
    • Heat a tablespoon of olive oil in a large frying pan over a medium to high heat and use a ¼ measuring cup to scoop up the batter and place the fritter mixture into your pan. Use a spoon to gently spread the mixture into a circle between ½cm – 1cm thick. You should be able to fit approximately six fritters (or even more depending on the size of your pan) into your frying pan.
    • Cook the  Fritters for 5 minutes on each side until they are crisp and golden brown before transferring to a plate and covering them with foil so they stay warm while you cook the next batch. Repeat until all the mixture has been used.

    Notes

    These Broccoli Bacon and Cheese Fritters are freezer friendly.
    You may need more/less water than stated in the recipe depending on the water content of your broccoli.

      Easy to make, full of flavour and the kids (a 4 year old & 1 year old) loved them! My 4 year old daughter told me she was freaking out they were so good Some in freezer and some packed for a daycare snack tomorrow – thanks!

      Hi,
      I was wondering if I could prep the mixture ahead of time and pop in the fridge until needed ( couple of hours tops) do you think this will have a negative effect on the mixture?
