Broccoli Bacon and Cheese Fritters

Broccoli Bacon and Cheese Fritters Recipe - also includes Thermomix instructions

When we had an oversupply of broccoli recently, I decided that it was time to finally try this Broccoli Bacon and Cheese Fritter recipe that I’ve been thinking about for ages now!  This recipe is pretty much the same as my Cauliflower Bacon and Cheese Fritters but I’ve just used broccoli instead of cauliflower and have omitted the zucchini, however you could easily add zucchini to this recipe too and I think I will next time.

Broccoli Bacon and Cheese Fritters

Although our eldest turned his nose up to these (got to love the attitude of a six year old!) our other two boys both enjoyed them and Mr 5 has been taking one to kindy in his lunchbox.  You can vary the size of the fritters you make to suit your needs, I made sure to make some smaller ones for our two year old and they’ve been a great snack or easy lunch for him too.

Broccoli Bacon and Cheese Fritters

If you would like to make a vegetarian version of this recipe, simply leave out the bacon!  It’s also important to remember that the amount of water you need when making this recipe will vary, if your broccoli is a bit older and on the drier side (which is completely fine!) you may need closer to one cup of water.

Broccoli Bacon and Cheese Fritters

These easy Broccoli Bacon and Cheese Fritters are simple to make and a great way to get some vegetables into the kids. They make a yummy light meal or snack and are perfect for the lunchbox too. They are freezer friendly and can also be made using a Thermomix.

Ingredients

  • 400 g of broccoli stalk removed -cut into small florets.
  • 4 rashers of short cut bacon cut into small pieces.
  • 2 cups of self raising flour 300g
  • 1 cup of parmesan cheese - finely grated 70g
  • 1/2 cup of tasty cheese - grated 50g
  • 1 garlic clove - crushed
  • 1 teaspoon of onion flakes
  • 2 eggs - lightly beaten
  • 3/4 cup of water 175g
  • pinch of salt
  • pinch of pepper
  • olive oil to shallow fry

Instructions

  • Place the broccoli florets into a food processor and blitz until they turn into small pieces. Transfer to a large bowl.
  • Add the crushed garlic, onion flakes, chopped bacon, parmesan cheese and tasty cheese to the bowl with the broccoli and add the self raising flour before stirring well to combine.
  • Beat the eggs in a small bowl lightly with a fork and add salt and pepper to taste. Add the eggs along with 1/4 cup of water to the bowl with the broccoli mixture and stir. Gradually add the extra water and stir until you have a thick batter - please note you may not need all of the water/or need extra depending on the water content of the broccoli you have used.
  • Heat a tablespoon of olive oil in a large frying pan over a medium to high heat and use a 1/4 measuring cup to scoop up the batter and place the fritter mixture into your pan. Use a spoon to gently spread the mixture into a circle between 1/2cm - 1cm thick. You should be able to fit approximately six fritters (or even more depending on the size of your pan) into your frying pan.
  • Cook the Fritters for 5 minutes on each side until they are crisp and golden brown before transferring to a plate and covering them with foil so they stay warm while you cook the next batch. Repeat until all the mixture has been used.

Notes

These Broccoli Bacon and Cheese Fritters are freezer friendly.
You may need more/less water than stated in the recipe depending on the water content of your broccoli.

Thermomix Broccoli Bacon and Cheese Fritters

  1. Place the parmesan and tasty cheese which has been cut into 3cm chunks into your Thermomix bowl and mix for 7 seconds on speed 9 to grate. Transfer to a separate bowl until needed.
  2. Without washing the bowl, place the bacon into your Thermomix bowl and mix for 4 seconds on speed 6. If you would like it cut into smaller pieces, mix for a further 2 seconds. Transfer to the bowl with the grated cheese.
  3. Without washing the bowl, add the broccoli florets, garlic clove and onion flakes to your Thermomix bowl and mix for 7 seconds on speed 8 or until finely cut.  If there are still large pieces in your Thermomix bowl, scrape the sides and blitz for a further 3 seconds on speed 6.
  4. Add the grated cheeses and bacon, along with 2 eggs, 300g of self raising flour, and HALF a cup of water to your Thermomix bowl in that order – please note you may not need all of the water depending on the moisture content/size of broccoli used. Mix for 15 seconds on speed 4 REVERSE to combine the ingredients. Scrape down the sides of the bowl and if your mixture is still a little dry, add the remaining 1/4 cup of water and mix for a further 15 seconds on speed 4 REVERSE or until combined.
  5. Heat a tablespoon of olive oil in a large frying pan over a medium to high heat and use a 1/4 measuring cup to scoop up the batter and place the fritter mixture into your pan. Use a spoon to gently spread the mixture into a circle between 1/2cm – 1cm thick. You should be able to fit approximately six fritters (or even more depending on the size of your pan) into your frying pan.

    Hi,
    I was wondering if I could prep the mixture ahead of time and pop in the fridge until needed ( couple of hours tops) do you think this will have a negative effect on the mixture?
