    Made using a yeast free dough, these easy Spinach and Cheese Scrolls can be ready to enjoy in less than one hour!

    Easy Spinach and Cheese Scrolls Recipe, freezer friendly and both regular and Thermomix instructions included.

    Scrolls are such an easy snack to make and they really are something everyone in my family enjoys.  While I don’t think these Spinach and Cheese Scrolls will knock Vegemite and Cheese and Pizza Scrolls off the top of being my their favourite (because – green!!), they are definitely mine.

    How to Make Spinach and Cheese Scrolls

    This recipe really couldn’t be more simple to make. The scroll dough is my go to recipe, it’s yeast free (so you can whip these up quickly!) and you just need some basic pantry ingredients to put it together. For the filling, you just need some baby spinach leaves, feta cheese and grated tasty cheese – that is it! You can also use other types of cheeses too, these are great with some mozzarella and parmesan as well.

    Tips for Making Spinach and Cheese Scrolls

    • You can use different types of cheeses for this recipe. Mozzarella and Parmesan are two of our favourite substitutions.
    • You can use frozen spinach for this recipe – just make sure it’s thawed and you have removed the excess moisture from it first.
    • It’s important to place the rolled dough into the fridge to chill (especially if you are making these in a warm environment) as this helps the dough to keep it’s shape as you cut the scrolls.
    • This recipe will make approximately 12 scrolls – you can make your scrolls bigger or smaller, however this will affect the cooking time.
    • To store these scrolls, place in an airtight container and enjoy within 3 – 4 days.
    • This recipe is freezer friendly.

    Ingredients
      

    • 2 cups self raising flour
    • 90 grams butter
    • ½ teaspoon salt
    • ⅔ cup milk

    Filling

    • 50 g butter softened
    • 100 grams feta cheese crumbled
    • 100 grams tasty cheese grated
    • 2 cups baby spinach leaves

    Instructions
     

    • Preheat the oven to 210 degrees and line an oven tray with baking paper.
    • Sift the flour and salt together in a large bowl before rubbing in the butter until the mixture is the consistency of bread crumbs.
    • Slowly add the milk and use a butter knife to combine. Turn out the dough and knead until it forms a smooth ball.
    • Use a rolling pin to roll dough out until you have a 30 x 40cm rectangle.
    • Spread the softened butter over the dough, leaving a 2cm gap around the edges.
    • Sprinkle the baby spinach leaves, feta cheese and ⅔ of the grated tasty cheese over the top of the butter.
    • Starting at the long side carefully roll the dough until enclosed.
    • Place the scroll log into the fridge for 20 mins to chill.
    • Cut into 12 slices – approximately 2cm thick and sprinkle the remaining grated cheese over the top of the scrolls.
    • Place on a baking tray, making sure you leave enough room to rise and bake in oven for 20 minutes or until golden brown on top and cooked through.
    • Let the scrolls cool on the tray for 5 minutes and then enjoy!

    Notes

    These Scrolls can be frozen for up to two months in a freezer safe container.

    • Thermomix

    Ingredients
      

    • 300 grams self raising flour
    • 90 grams butter
    • ½ teaspoon salt
    • 160 grams milk

    Filling

    • 50 g butter softened
    • 100 grams feta cheese crumbled
    • 100 grams tasty cheese
    • 50 grams baby spinach leaves

    Instructions
     

    • Preheat the oven to 210 degrees and line an oven tray with baking paper.
    • Place the tasty cheese into your Thermomix bowl (cut into 3cm pieces) and blitz for 6 seconds, speed 6 to grate. Set aside until needed.
    • Without washing the bowl, place the flour, butter and salt into the Thermomix bowl and mix for 10 seconds on speed 9 until mixture is the same consistency as bread crumbs.
    • Add the milk and mix for 7 seconds on speed 4 to combine.
    • Use the kneading function to knead the dough for 2 minutes
    • Use a rolling pin to roll dough out until you have a 30 x 40cm rectangle.
    • Spread the softened butter over the dough, leaving a 2cm gap around the edges.
    • Sprinkle the baby spinach, feta and ⅔ of the grated tasty cheese over the top of the butter.

      My daughter loves scrolls, especially vegemite and cheese. She’s not a big spinach fan so maybe this might be a great way to get to eat some. Great for school lunch.
