    These easy Mint Maltesers Cheesecake Balls make the perfect after dinner treat!

    Mint Maltesers Cheesecake Balls Recipe

    It was my husband who spotted the new Mint Maltesers when they first appeared in our local supermarket a little while ago and he quickly snapped up a few bags of them, knowing that I’d want to make something with them – plus he also wanted to try them for himself!  I’ve worked my way through three bags of these chocolate mint treats so far (and have been super happy with how the recipes have turned out.

    Mint Maltesers Cheesecake Balls Recipe

    My husband LOVED these Mint Maltesers Cheesecake Balls and I don’t think the batch I made even made it to his work – where most of my creations end up!  This recipe is based on my Mint Cheesecake Balls but with the added indulgence (and surprise!) of a  Malteser in the centre.

    Mint Maltesers Cheesecake Balls Recipe

    When making this recipe you will need to get your hands a little dirty when it comes to encasing the Maltesers into the centre of your cheesecake balls as well as when you dip the cheesecake balls into the melted milk chocolate.  If you can’t find Mint Maltesers in your area, you can easily use classic Maltesers or even the dark chocolate ones instead as you will still get a mint cheesecake hit from the cheesecake itself.

    Ingredients
      

    • 200 g pack of Chocolate Mint Slice Biscuits
    • 250 g of cream cheese – softened
    • 200 g of milk chocolate
    • 140 g pack of Mint Maltesers

    Instructions
     

    • Line a baking tray (or plate) with baking paper and set aside until needed.
    • Place the Mint Slice biscuits into a food processor and blend until crumbs.
    • Add the softened cream cheese and blend until combined.
    • Scoop up the mint cheesecake mixture with a dessert spoon and place a Mint Malteser in the centre of the mixture and gently encase it in the cheesecake mixture and roll into a ball. Continue until all the mixture has been used.
    • Place the mint Maltesers Cheesecake Balls into the freezer for a minimum of half an hour - you want the balls to be very firm.
    • Break the milk chocolate into pieces and place in a microwave safe bowl to melt. I cook the chocolate for 30 second spurts until it’s almost melted and then mix until it’s completely melted.
    • Remove the balls from the freezer and poke a skewer into the bottom of the balls (slightly off centre so you don't hit the Malteser in the middle!) and dip them in the melted chocolate. Place on a wire rack to set. Repeat until all the balls are coated.
    • Roughly chop the remaining Mint Maltesers and while the chocolate is still soft, decorate the balls by sprinkling the Mint Maltesers pieces on top.
    • Put the balls back into the freezer for half an hour, or until the milk chocolate has set.

    Notes

    Don't worry if you don't have Mint Maltesers, you can use regular or dark chocolate maltesers and will still get a mint hit from the cheesecake.

    Thermomix Mint Maltesers Cheesecake Balls

    2.  Place the Mint Slice Biscuits in Thermomix bowl and blitz for 5 seconds on speed 7.
    3. Add the softened cream cheese to the bowl with the crushed Mint Slice biscuits and blitz for 10 seconds on speed 5 until combined – it may take a little longer if your cream cheese isn’t completely soft.
    4. Scoop up the mint cheesecake mixture with a dessert spoon and place a Mint Malteser in the centre of the mixture and gently encase it in the cheesecake mixture and roll into a ball. Continue until all the mixture has been used.
    5. Place the mint Maltesers Cheesecake Balls into the freezer for a minimum of half an hour – you want the balls to be very firm.
    6. Break the milk chocolate into pieces and place in a microwave safe bowl to melt. I cook the chocolate for 30 second spurts until it’s almost melted and then mix until it’s completely melted.

      I love the surprise Malteser inside – what a hidden gem! I must keep an eye out for the mint Maltesers on my next shop!
