Recipes don’t get much better than these easy Pancakes!
This SUPER easy Pancake recipe originally came from my Mum and it’s the same recipe we grew up enjoying. These days, you will find us enjoying these delicious pancakes weekly in our house as they are simple to make, budget friendly and the kids just love them!
Ingredients:
All you need to make these pancakes is a few staple ingredients:
- Self Raising Flour
- Eggs
- Milk
- Vanilla Extract
- Salt – optional
When we were kids we used to add some of my Mum’s Apricot Jam to these pancakes with a little whipped cream and we would then roll them up to eat. My kids do still enjoy these with Jam, however their favourite way to eat these pancakes is with maple syrup and fruit.
My Tips for Making the BEST Pancakes:
- Heat your frying pan to a medium/high heat before adding the mixture. You may need to turn the heat down after you have cooked your first couple of pancakes.
- To make your pancakes the same size, use a ¼ cup measuring cup to scoop up the mixture.
- You can also make your pancakes smaller or larger if you wish, please note the cooking time will vary.
- Instead of using butter in your frying pan, you can use coconut oil, ghee or any other light flavoured oil.
- If you wish to omit the salt that is fine.
- Gluten free self raising flour can also be used for this recipe.
- Store any leftover pancakes in an airtight container in the fridge for up to two days. You will need to warm them slightly to help them soften.
- These pancakes can also be frozen.

Stopping by from the FFF link up! Pancakes are always a winner in our house, and they really are so easy to make. Even my two oldest, at 19 and 20, get out of bed earlier for pancakes!

Mmm I love pancakes, possibly one of my favourite things. Love mine with greek yoghurt and berries. If I am looking for a real sweet treat I add a little nutella. 😉

I have bad pancake karma and always end up with pancakes on the black side. I am however a big fan of them when they’re swimming in maple syrup and topped with banana. All the noms!
