    These easy Apple Pikelets will certainly help to keep the kids (and your own!) tummies full! They have no added sugar, are freezer friendly and both regular and Thermomix instructions included.

    Pikelets are such a great snack for the kids, and we regularly add them to my boys lunch boxes, enjoy them as a snack – and even for breakfast! If your kids are anything like mine, you will often find yourself with half eaten apples lying around the house or coming home in lunch boxes.  Instead of throwing these pieces of perfectly good fruit out (even if they have slightly coloured) I like to grate them up and turn them into these easy Apple Pikelets!

    You can use whatever type of apples you have for this recipe, and while I like to leave the skin on, you can certainly peel them if you prefer.  I don’t add sugar to this recipe as I find the apples provide enough sweetness – and if you then top these pikelets with jam like my kids enjoy, you really don’t need it!

    My Tips for How to Make these Apple Pikelets

    • You can use any type of apple you like for this recipe.
    • If you have slightly more or less than two apples – that’s ok! The recipe will still work out.
    • I prefer to leave the skin on my apples, however you can peel them first if you prefer.
    • These pikelets are freezer friendly and will last up to two months in the freezer.

    Easy Apple Pikelets

    This easy Apple Pikelets recipe is perfect for the whole family! It has no added sugar, is freezer friendly and both regular and Thermomix instructions are included.

    Ingredients
      

    • 2 apples grated
    • 1 cup self raising flour
    • 60 grams melted butter
    • ¾ cup of milk
    • 1 teaspoon vanilla extract
    • 1 egg
    • ½ teaspoon cinnamon
    • extra butter to grease the frying pan

    Instructions
     

    • In a large bowl add the self raising flour, cinnamon and grated apples and stir to combine.
    • In a jug, add the milk, egg, vanilla extract and cooled melted butter and combine well with a small whisk.
    • Pour the liquid ingredients into the bowl with the flour and use a whisk to combine all of the ingredients.
    • Place a non stick frying pan on the stove over a medium high heat and add a little butter.
    • Place table spoon sized amounts of the mixture into the frying pan and cook for 1-2 minutes before carefully flipping over and cooking for a further minute.
    • Transfer the cooked pikelets to a plate and cover with foil to keep warm.
    • Repeat (adding a little extra butter as needed) until you have used all of the mixture.
    • Serve the pikelets either warm or cold with your favourite topping or keep in the fridge/freezer until required.

    Notes

    Equipment

    • Thermomix

    Ingredients
      

    • 150 grams apples
    • 150 grams self raising flour
    • 60 grams butter
    • 180 grams of milk
    • 1 teaspoon vanilla extract
    • 1 egg
    • ½ teaspoon cinnamon
    • extra butter to grease the frying pan

    Instructions
     

    • Place the butter into your Thermomix bowl and cook for 3 minutes, 60 degrees, speed 2.
    • Add the apples (cut into quarters) and mix for 5 seconds, speed 6 to grate.
    • Scrape down the sides of your Thermomix bowl and add the self raising flour, cinnamon, milk, egg and vanilla extract and mix for 15 seconds, speed 4 to combine.
    • Place a non stick frying pan on the stove over a medium high heat and add a little butter.
    • Place table spoon sized amounts of the mixture into the frying pan and cook for 1-2 minutes before carefully flipping over and cooking for a further minute.
    • Transfer the cooked pikelets to a plate and cover with foil to keep warm.
