    Love Cherry Ripes? Well you just HAVE TO make these easy Cherry Ripe Brownies ASAP!  Both regular and Thermomix instructions included.

    I can never resist buying a Cherry Ripe (ok, maybe a couple!) whenever I see them on special, and that’s how this Cherry Ripe Brownies recipe came about.  This recipe is based on my Snickers Brownies recipe and I simply substituted the Snickers for Cherry Ripe Bars – how simple is that!

    I love how simple this recipe is to put together, you can use just one saucepan to make these Brownies if making them conventionally, and you only need your Thermomix bowl otherwise.  Although I’m in all kinds of love with my classic Cherry Ripe Slice recipe, these brownies come in at a very close second to being one of my favourite recipes to make using Cherry Ripes.

    Tips for Making Cherry Ripe Brownies

    • To make these Cherry Ripe Brownies a little more decadent, you can use an extra chopped up Cherry Ripe Bar to sprinkle pieces across the top of the mixture before putting it into the oven.
    • It’s important to leave the brownie in the baking tin to cool completely before removing and cutting into pieces, as this helps it to ‘set’.
    • You can also add chocolate chips to this recipe.
    • These Brownies are best stored in an airtight container for up to 4 days.

    This easy Cherry Ripe Brownies Recipe is the perfect simple dessert or slice to enjoy at your next special occasion. It can be made using one bowl and both regular and Thermomix instructions are included.

    Ingredients
      

    • 150 grams butter
    • 1 cup caster sugar
    • ¾ cup of cocoa
    • 1 teaspoon vanilla extract
    • 3 eggs
    • ½ cup plain flour
    • 4 Cherry Ripe Bars

    Instructions
     

    • Preheat your oven to 160 degrees and line the base and sides of a 20cm square baking tin with baking paper.
    • Cut the Cherry Ripes in pieces (2 - 3 cm) and set aside until needed.
    • In a large saucepan (you want it to be big enough to accommodate the extra ingredients added later), melt the butter, cocoa and sugar over a low heat – stirring continuously.
    • Add the vanilla extract and eggs - whisking the mixture as you go.
    • Sift the flour over the mixture and whisk to combine.
    • Working quickly, add the most of the Cherry Ripe pieces (leaving ¼ aside) to your brownie mix and pour into your prepared baking tin.
    • Add the remaining Cherry Ripe pieces to the top of the mixture and pop into the oven and bake for 35 minutes.
    • Allow Brownie to cool completely in the tin before removing and then cut into pieces to serve.

    Notes

    You can use more or less Cherry Ripe Bars if your prefer.
    It's important to leave these Brownie in the tin to cool completely before cutting as this will help it 'set'.

    Ingredients
      

    • 150 grams butter
    • 220 grams caster sugar
    • 75 grams of cocoa
    • 1 teaspoon vanilla extract
    • 3 eggs
    • 100 grams plain flour
    • 4 Cherry Ripe Bars

    Instructions
     

    • Preheat your oven to 160 degrees and line the base and sides of a 20cm square baking tin with baking paper.
    • Cut the Cherry Ripes in pieces (2 - 3 cm) and set aside until needed.
    • Place the butter(cubed), caster sugar and cocoa into your Thermomix bowl and cook for 3 minutes, 65 degrees speed 1. If the butter hasn’t quite melted, cook for a further 1 minute, 65 degrees, speed 1.
    • Add the vanilla extract, eggs and plain flour and mix for 10 seconds on speed 4 to combine
    • Scrape down the sides of your bowl and add the cherry ripe pieces (leaving ¼ of cup aside) and mix for a further 10 seconds on speed 4, REVERSE.
    • Working quickly, pour into your prepared baking tin and add the remaining Cherry Ripe pieces to the top of the mixture and pop into the oven and bake for 35 minutes.
    • Allow Brownie to cool completely in the tin before removing and then cut into pieces to serve.

      My go to brownie! Such a massive hit in our household. Have the T31 so had to melt butter, sugar and cocoa 70° for 5 minutes. Maybe it’s time for an upgrade 🙂
