How to Make Polenta Chips

Ok, so let me start out by saying that if you are hoping you will be able to trick your kids into thinking these Polenta Chips are the same as ‘regular’ chips, you are going to be disappointed.  However, these Baked Polenta Chips are still crispy and in my opinion they come pretty close to being better than their deep fried counterpart.

How to make Polenta Chips

We’ve been making these Polenta Chips quite regularly over the past few months as they are a big hit with both myself and Mr almost 3, who will steal some from my plate when he runs out!  They are really quite simple to make and I like to make a couple of batches at a time so that I can then pop them into the freezer for an easy snack – you can find more freezer friendly snack recipes here.

As well as being a great side dish or snack, these Polenta Chips are also yummy when cold and can be popped into lunchboxes for something a little bit different.

How to Make Polenta Chips – My Tips

  • Make sure that you have all of your ingredients ready to go prior to making this recipe. You do need to work quickly when adding the cheese etc to the polenta mixture.
  • You can make these Cheesy Polenta Chips up to the stage where you chill the mixture in the fridge a day or two before you need them. Alternatively, you can also freeze the baked Polenta Chips for up to two months.
  • You can add dried herbs to this recipe.

Cheesy Polenta Chips

These Cheesy Polenta Chips are super simple to make and are perfect as a snack or side to your favourite family meal. They are also freezer friendly and Thermomix instructions also included.
Prep Time20 mins
Cook Time30 mins
Chilling Time1 hr

Ingredients

  • 70 grams parmesan cheese grated
  • 100 grams tasty cheese grated
  • 2 cloves garlic crushed
  • 1250 mls vegetable stock
  • 250 grams polenta
  • 50 grams butter
  • pinch salt

Instructions

  • Line a 34cm x 24cm tray with baking paper and set aside until needed.
  • Place the vegetable stock into a large saucepan and bring to the boil on your cooktop.
  • Reduce to a medium heat and slowly add the polenta to the boiling water, whisking as you go.
  • Once all the polenta has been added, whisk for 3 – 4 minutes to cook.
  • Remove the saucepan from the cooktop and working quickly, add the grated tasty and parmesan cheese, crushed garlic, butter and salt and mix with a large spoon to combine.
  • Transfer the mixture to your prepared baking tray and use the back of a spoon to spread and flatten before popping another piece of baking paper on top and carefully smoothing it further.
  • Place the tray into the fridge for one hour to chill until it’s completely cooled.
  • Preheat your oven to 200°C.
  • Once completely cooled, cut into ‘chip’ size pieces and transfer to two non-stick baking trays to cook for 25 – 30 minutes or until the Polenta Chips are golden.

Notes

You can freeze these Cheesy Polenta Chips, I prefer to freeze them after baking.
To reheat, place onto an oven tray and cook for 10-12 minutes at 190 degrees - fan forced.
This recipe can be doubled, you will need a second baking tray.

Thermomix Cheesy Polenta Chips

These Cheesy Polenta Chips are super simple to make and are perfect as a snack or side to your favourite family meal and they are also freezer friendly too.
Prep Time20 mins
Cook Time30 mins
Chilling Time1 hr
Course: Dinners and Sides
Cuisine: Modern

Servings: 6 people

Ingredients

  • 70 grams parmesan cheese
  • 100 grams tasty cheese
  • 2 cloves garlic
  • 1250 mls vegetable stock
  • 250 grams polenta
  • 50 grams butter
  • pinch salt

Instructions

  • Line a 34cm x 24cm tray with baking paper and set aside until needed.
  • Place the garlic, parmesan cheese and cheddar cheese into the Thermomix bowl and grate on Speed 9, 10 seconds. Set aside in a seperate bowl.
  • Add the vegetable stock and heat for 8 minutes, Varoma, Speed 2.
  • Set the Thermomix to Varoma, 3 minutes, Speed 2 and slowly add the polenta through the MC hole (while the blades are turning) and replace the MC once done.
  • Add the butter, cheese and garlic cloves and salt and slowly increase to Speed 7 for 1 minute (if the Thermomix starts shaking, turn the Speed down and continue to increase slowly).
  • Working quickly, pour the mixture into your prepared baking tray and place a sheet of baking paper over the top before placing another tray on top to keep it flat. Place into the fridge for one hour to chill.
  • Pre-heat your oven to 200 degrees once the mixture is cold and cut into 'chip' size pieces. Place these onto a baking tray covered with baking paper and cook for 30 minutes or until crisp and golden.
