    Simple Cinnamon Cake Recipe

    After a HUGE couple of days out and about with the boys, we had a ‘home day’ earlier this week to give ALL of us a chance to relax (well as much as is possible!) and catch our breath.  The boys favourite new pastime is to explore the back garden (aka dig in the dirt and throw stuff) however it keeps them occupied and gives me a chance to get some things done/sit down and have a coffee so I really can’t complain.

    I decided to make the most of my time and bake a cake for our afternoon tea.  Although I do love baking with the boys, it’s just so much easier (and quicker) to do it on my own.  Knowing I only had limited time before the arguing would start, I decided to try this simple Cinnamon Cake recipe.

     

    Simple Cinnamon Cake

    All you need is a few pantry staples to put this cinnamon cake together.  In an effort to ‘fancy’ it up a little, I used a 20cm moulded bundt tin, however a 20cm round cake tin is all you need.

    This cake took me around 15 minutes to put together and just as I was about to pop it into the oven, the crying started – perfect timing!

    Ingredients
      

    • 180 g of butter - at room temperature
    • 155 g ¾ cup of caster sugar
    • 2 eggs
    • 300 g 2 cups of self raising flour
    • 1 teaspoon of cinnamon
    • 185 ml ¾ cup of milk

    Instructions
     

    • Preheat your oven to 180 degrees and line the base and sides of a 20cm round cake tin with baking paper.
    • Place the butter and caster sugar into the bowl of an electric mixer and beat until it's pale and creamy. Reduce the speed of your mixer and add the eggs one at a time making sure you beat them well to combine with the mixture.
    • Remove the bowl from the electric mixer and add the sifted flour and cinnamon along with the milk and gently fold the ingredients together until combined.
    • Spoon the cinnamon cake mixture into your prepared cake tin and gently smooth the surface. Place the cake into the oven and cook for 45 minutes or until cooked through when tested with a skewer.
    • Carefully remove the cinnamon cake from the oven and allow it to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.

    Thermomix Cinnamon Cake Method

    1. Preheat your oven to 180 degrees and line the base and sides of a 20cm round cake tin with baking paper.
    2. Place the butter and caster sugar into your Thermomix bowl and mix for 20 seconds on speed 4.
    3. Add the self raising flour, eggs, cinnamon and milk and mix for 30 seconds on speed 5. Scrape down the sides of the bowl and mix for a further 30 seconds on speed 5.
    4. Spoon the cinnamon cake mixture into your prepared cake tin and gently smooth the surface. Place the cake into the oven and cook for 45 minutes or until cooked through when tested with a skewer.
    5. Carefully remove the cinnamon cake from the oven and allow it to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.

    Because I used a bundt tin, my cake took only 25 minutes to bake.  If you are using a different sized tin, I’d suggest checking your cake at 25mins to see how it’s going. Both of the boys were very keen to try a slice of cake and polished off their pieces within seconds. Simple Cinnamon CakeIf you want to make this cake extra special, brush a little melted butter and sprinkle a tablespoon of sugar over the top of it while it’s still warm.  Personally I think it’s perfect  fresh from the oven and enjoyed with a hot cup of tea.

      Oh my gosh….Where to begin?
      I was very excited to try your recipe. The first attempt was not good for me. The cake was extremely heavy and very dense. I decided to try it again but ended up with the same results 🙁 I turned up the heat just a tad bit hoping it would help. So I thought perhaps a third attempt would result in success but it did not. I ended up throwing away all 3 cakes. I have been baking for about 6 years so I am very confused. I have never baked a cake at 180 degrees before, is this the problem? Very disappointed it didn’t turn out well and that I wasted so many ingredients.

        Hi Sonya,

        Thanks for your message, I’m sorry the cake didn’t work out for you. 180 c is a fairly standard temperature for baking cakes, the only thing I can think of that caused your problems is perhaps your oven is Fahrenheit?

      YES! This is my kind of recipe – can get it put together just before the next meltdown happens 🙂 Plus all simple ingredients I always have on hand – perfect! I do that, too, by the way – let me kids play and make a mess of things if it gives me just a few minutes of peace. Take ’em where we can get ’em, right?!
