    Simple Sausage Hot Pot Recipe - Top View

    This recipe was inspired by Woolworths’ new range of Gourmet Sausages. The range includes delicious flavours like Cracked Black Pepper & Wagyu Beef Sausages, Lamb, Rosemary & Feta Sausages, Classic Pork Cumberland Sausages, and Feta & Spinach Chicken Sausages. This new premium range of sausages are just like the ones you would find at a butcher, they have a high meat content, and are made with coarsely ground meat and natural casings.

    I decided to use the Caramelised Onion & Angus Beef Sausages to make this Sausage Hot Pot recipe, as they are full of flavour and will go perfectly with just about any type of ingredient. This recipe requires just a few other basic ingredients, and you can also modify the vegetables you use to suit the tastes of your family or what you already have in the fridge/freezer.

    Sausage Hot Pot Recipe Ingredients

    This easy dinner can be on the table ready to enjoy in just over 30 minutes, and if you have any leftovers, you can heat it and pop it into a thermos for the kids to take to school the next day, or you can also freeze any leftovers.

    Tips for making this  recipe:

    • You only need one pan (with a lid) for this recipe, however make sure that it is big enough to fit ALL of your ingredients and has enough room for the rice to cook.
    • The vegetables in this recipe can be substituted to suit your family’s taste. It’s also delicious with grated zucchini, beans or spinach.
    • You can use other flavoured sausages from the Woolworths Gourmet Sausages range. We also really enjoyed the Chicken, Feta & Spinach Sausages with this recipe.
    • This recipe is freezer friendly.

    Equipment

    • Large Saucepan

    Ingredients
      

    • 500 gram pack of Woolworths Caramelised Onion & Angus Beef Sausages
    • 1 carrot grated
    • 1 brown onion finely diced
    • 2 cloves garlic crushed
    • ½ red capsicum finely diced
    • 2 tablespoon olive oil
    • 2 cups Woolworths Jasmine Rice
    • 2 and ½ cups Woolworths Chicken Liquid Stock
    • 400 gram Woolworths Diced Italian Tomatoes
    • 1 cup Woolworths Baby Peas

    Instructions
     

    • Add one tablespoon of olive oil to a large saucepan and heat over a medium/ to hot heat.
    • Add the sausages and cook for 3 - 4 minutes or until browned. Remove the sausages from the pan and set aside to cool.
    • Reduce to medium heat and in the same pan, add the remaining olive oil, grated carrot, diced brown onion, crushed garlic and diced capsicum. Stir to combine the ingredients and cook for 3 - 4 minutes or until the onion is translucent.
    • In the meantime, thinly slice the cooled sausages.
    • Add the rice, chicken liquid stock, diced tomatoes and sliced sausages to the saucepan, and stir to combine.
    • Bring the mixture to a simmer, then reduce to a medium to low heat. Place the lid onto your saucepan.Cook for 5 minutes before giving the mixture a stir. Replace the lid and cook for a further 5 minutes.
    • Add the baby peas and stir to combine. Remove the saucepan from the heat and replace the lid before letting it sit for 10 minutes to allow the rice to completely cook and the peas to warm.
    • Serve and enjoy!
