With a creamy lemon cheesecake filling, this easy peasy no bake Lattice Slice makes the perfect dessert!
A couple of weeks before our little guy turned three, my Mum made the last minute decision to fly up from Melbourne for a few days to help celebrate his birthday. As planning a huge party was the LAST thing I felt like doing at 32 weeks pregnant, I just asked a couple of friends to come over for some birthday cake and a simple afternoon tea. I’d been wanting to make a Lattice Slice for Mum after she LOVED my Caramel Cheesecake Lattice Slice I made her last year, and it seemed like the perfect opportunity to give it a try.
I modified a traditional Lattice Slice recipe I found in an old cookbook just a little to use just one pack of Lattice Biscuits (which was all I had) and instead of using vanilla essence (which I’d run out of!) I used one vanilla pod instead.
I also made this no bake Lattice Slice in the Thermomix a couple of days before the party and it was all ready for the fridge in less than 10 minutes, however even if you make this recipe the regular way, it takes no time at all.
My Mum absolutely LOVED this slice, and even wrapped the last piece up to take on the plane with her, which is a pretty good endorsement I think!

- 1 teaspoon of vanilla essence
- The juice of 1 lemon
- 1/4 cup of boiling water

- Place the softened cream cheese, softened butter and caster sugar into the bowl of an electric mixer and mix for 5 -6 minutes or until smooth and creamy. Please note the mixing time may vary depending on the temperature of your ingredients.

I really dislike the taste of gelatine. is it essential to this recipe or can I omit it
Lauren says
Hi Jannine, it’s pretty important as it’s helps the cheesecake centre to set sorry.

Hi Lauren, I’m trying to think of a substitute for the lemon juice liquid when I make this for my children ( I’ll leave it in for me ) as they are not fans of lemon. – what would you suggest? I like this as an alternative to vanilla slice with the thick sugary icing.
Lauren says
Hi Sandie, I think you could easily leave it out completely and it should still be ok. Maybe you could add a teaspoon or two of vanilla if they like that?
julie says
does the gelatine have to be like jelly or like a thick liquid
Lauren Matheson says
Hi, it has a consistency a little thicker than jelly x
Ann Wade says
Hi Lauren, Just wanted you to know my sister in-law gave us a very similar recipe to your’s about 35 years ago, she worked for Davis Gelatine as a home economists (as they were called then)…it has been a family favourite since then. I haven’t made it for a while, so when I saw your recipe I took a trip down memory lane and made it. It was as yummy as I remember, the only difference is we sift icing sugar over the slice after it has been cut up…..Thanks for this and all your wonderful recipes…keep up the good work. Cheers Ann
Lauren Matheson says
Hi Ann, Oh thank you so much for your lovely message, I really appreciate it xx
Amby says
Fantastic recipe! My kids and I are from the U.S and my partner, who is Australian always introduces us to traditional recipes. We love this one and I can’t wait to make some other delicious flavors. 🙂 thank you, Lauren!

Sue says
How long would this keep in the fridge. Would it go soon if kept for a couple of days, say from Friday to Monday
Lauren Matheson says
Hi Sue, it does keep for a few days, just pop it into an airtight container x
Karen Pollock says
Hi ladies, yes this the easiest, yummiest slice and always goes down a treat at all family functions.
I usually make it and keep it in the freezer, just take it out a little earlier than needed and slice when
still half frozen makes it easier to cut. But it’s also yummy to eat frozen like an ice cream slice.
jeanne ostler says
when I make vanilla slice the biscuits go soft quickly. Is there something ( like egg white) to coat the biscuits, to stop them from softening. Any help would be appreciated???
Lauren Matheson says
Hi Jeanne, Hmm, I haven’t tried using egg white to coat the biscuits before I’m sorry. I think it’s just part of the type of recipe that makes the biscuits go soft. I always keep mine covered in the fridge which also seems to help keep the biscuits for longer
Emilyjackson says
This looks too good to eat!! I’ll try this fabulous slice for my kids!!! Thanks for sharing!!
Lauren Matheson says

I made this slice and wondered if there was a way to make the filling lighter and fluffier.
