    These easy Broccoli and Cheese Balls make a great snack, easy meal or lunch box treat for the kids. Both regular and Thermomix instructions included.

    Easy Broccoli and Cheese Balls Recipe

    These yummy Broccoli and Cheese Balls were inspired by both my Broccoli and Bacon Fritters and my Cauliflower Nuggets recipes, and they came about after we found ourselves with an oversupply of broccoli yet again!

    Easy Broccoli and Cheese Balls Recipe

    Although they are baked and not fried, these Broccoli Balls still end up with a nice crunchy outer layer thanks to brushing them with a little extra virgin olive oil before popping them into the oven.  For some extra crunch, you could try using panko breadcrumbs instead of regular breadcrumbs and you can also shallow fry these in your frying pan if you like.

    Easy Broccoli and Cheese Balls Recipe

    These are really yummy enjoyed fresh from the oven while they are still warm (especially with hummus!) however they are also tasty served cold, which makes them a great snack for the kids lunch boxes. You will make around 24 balls with this recipe, and as they are freezer friendly, you can pop any leftovers away to enjoy another time.

    Tips for Making My Broccoli and Cheese Balls Recipe

    • You will need two heads of broccoli for this recipe.
    • There is no need to cook the broccoli before making this recipe, it’s best made raw.
    • If you have a little more than 300 grams of broccoli florets, that’s ok. You can add a little extra water (eg 1 tbsp) to your mixture to help bring it together if needed.
    • You can also use panko breadcrumbs in this recipe too.

    Broccoli and Cheese Balls Recipe

    These easy Broccoli and Cheese Balls make a great snack, easy meal or lunch box treat for the kids! Both regular and Thermomix instructions included.

    Equipment

    • 1 x Baking Tray

    Ingredients
      

    • 2 heads of broccoli florets approximately 300 grams
    • 1 cup tasty cheese grated - 100 grams
    • ½ cup mozarella cheese grated - 50 grams
    • 1 tablespoon onion flakes
    • pinch of salt
    • 1 garlic clove crushed
    • 2 eggs
    • 1 cup bread crumbs 90 grams
    • 2 tablespoon extra virgin olive oil

    Instructions
     

    • Remove the broccoli florets from the stalk and place into a food processor. Pulse 3 - 4 times or until finely grated.
    • Transfer the grated broccoli to a large bowl and add the grated tasty and mozzarella cheese, as well as the bread crumbs crushed garlic, salt and onion flakes. Stir well to combine.
    • Break the eggs into a small bowl and whisk to combine. Add the whisked eggs to the broccoli and cheese mixture and stir well to combine. Place the bowl into the fridge to chill for 15 minutes.
    • In the meantime, pre-heat your oven to 210 degrees (fan forced) and line a tray with baking paper.
    • Scoop the mixture up with a dessert spoon and shape into balls. Repeat until you have used all of the mixture.
    • Place the olive oil into a small container and using a pastry brush, gently brush the surface of the balls to lightly coat.
    • Place the tray into your pre-heated oven and cook for 10 minutes. Carefully remove and turn the balls over and cook for a further 10 minutes or until golden.

    Thermomix Instructions

    • Place the tasty cheese, mozzarella, onion flakes and garlic clove into your Thermomix bowl and mix for 10 seconds, speed 9. Set aside.
    • Without washing the bowl, add the broccoli florets and mix for 7 seconds, speed 6 to grate.
    • Add the cheese mixture you prepared earlier along with the breadcrumbs, eggs and salt and mix for 10 seconds, speed 6 on reverse to combine. Place your Thermomix bowl into the fridge to chill for 15 minutes.
    • In the meantime, pre-heat your oven to 210 degrees (fan forced) and line a tray with baking paper.
    • Scoop the mixture up with a dessert spoon and shape into balls. Repeat until you have used all of the mixture.
    • Place the olive oil into a small container and using a pastry brush, gently brush the surface of the balls to lightly coat.
    • Place the tray into your pre-heated oven and cook for 10 minutes. Carefully remove and turn the balls over and cook for a further 10 minutes or until golden.

    Notes

    This recipe is freezer friendly.
    You can omit the mozzarella cheese and use parmesan instead if you prefer.

      thankyou for this, have 2 grandsons staying and these look great to serve up to them, will get veges in for sure. Trying it tomorrow, will report back how they go down. Will rate this after they have devoured them. I’m sure between them and hubby it will be a sound 5.
