If you like Anzac Biscuits, then you are going to LOVE these Almond Anzac Biscuits – I’m kicking myself that it took me so long to make them!
The idea for these Almond Anzac Biscuits came about when we were heading over to a friend’s place for morning tea. I wanted to put a different spin on my traditional easy Anzac Biscuit recipe and while I briefly considered adding chocolate chips (after how could you go wrong with chocolate?!) I discovered a pack of flaked almonds hiding in the back of the pantry and decided to add them instead – BEST DECISION EVER!
When it comes to Anzac Biscuits, you are either team chewy or team crispy, I’m definitely team chewy and love my Anzac Biscuits to be thick and chewy in the centre. If you are a little strange (sorry!) and prefer a crispy biscuit, simply cook your Almond Anzac Biscuits for a few minutes more. The flaked almonds make these Anzac Biscuits simply amazing and add a yummy crunch to these already delicious chewy Anzac Biscuits.
These Almond Anzac Biscuits are super easy to make either traditionally or using a Thermomix, however if you decide to make these in the Thermomix I encourage you to stir through the flaked almonds as they are pretty delicate and you want nice big chunks of almonds throughout your biscuit. Also if you find your mixture is a little crumbly, simply squeeze the mixture together when forming a ball as it will come together once they have baked – I promise!
Almond Anzac Biscuits
Ingredients
- 1 cup 150g of plain flour
- 1 cup 220g of caster sugar
- 1 cup 85g of desiccated coconut
- 1 cup of rolled oats
- 100 g of flaked almonds
- 140 g butter
- 1 tablespoon golden syrup
- 1 teaspoon bicarbonate of soda
- 2 tablespoons boiling water
Instructions
- Preheat your oven to 170 degrees and line two trays with baking paper.
- Mix together the plain flour, caster sugar, coconut, flaked almonds and rolled oats in a large bowl.
- Melt the butter and add the golden syrup and bicarbonate of soda (dissolved in the boiling water).
- Make a well in the centre of the bowl, add the liquid and stir through.
- Use a tablespoon to scoop up mixture and roll into balls. Don't worry if your mixture is a little crumbly, just squeeze it together and it will come together when baking. Place on the tray and flatten slightly
- Bake for approximately 18 minutes, or until the biscuits have turned a dark golden colour. If you prefer a crispy biscuit, cook for 20 minutes - I like my biscuits to still be a little chewy in the middle.
- Carefully remove your Almond Anzac Biscuits from the oven and cool them on the baking trays for 10 minutes before carefully transferring to a wire tray to cool completely.

Thermomix Almond Anzac Biscuits Instructions
- Preheat oven to 170 degrees and line two trays with baking paper.
- Place the butter and golden syrup into your Thermomix bowl and melt for 2 minutes on 60 degrees speed 2 or until the butter has melted and the ingredients have combined.
- Combine the bicarbonate of soda and boiling water in a small bowl and add to the melted butter mixture and mix for 10 seconds on Speed 3.
- Add the rolled oats, plain flour, caster sugar and coconut and mix for 25 seconds on speed 2 REVERSE or until the mixture has combined.
- Add the flaked almonds and carefully stir through with a spoon.
- Use a tablespoon to scoop up mixture and roll into balls. Don’t worry if your mixture is a little crumbly, just squeeze it together and it will come together when baking. Place on the tray and flatten slightly
- Bake for approximately 18 minutes, or until the biscuits have turned a dark golden colour. If you prefer a crispy biscuit, cook for 20 minutes – I like my biscuits to still be a little chewy in the middle.
- Carefully remove your Almond Anzac Biscuits from the oven and cool them on the baking trays for 10 minutes before carefully transferring to a wire tray to cool completely.

To make them dairy free could you substitute nuttelex for the butter? Would they still work?
