This easy Banana and Pineapple Cake is also perfect to make with the kids with lots of mashing, measuring and mixing involved, what more could you ask for!?!? It’s also a great opportunity to use up those brown bananas the kids refuse to eat.
Banana and Pineapple Cake Ingredients

To make this classic Banana and Pineapple cake you will need: bananas (the browner the better!), crushed pineapple that has been drained, cinnamon, caster sugar, self-raising flour, desiccated coconut, coconut oil, pineapple juice and eggs.
It is important to drain the juice from the crushed pineapple. To do this, place the crushed coconut into a sieve and place a bowl underneath to catch the juice. Use the back of a spoon to remove the extra juice.
How to make a Banana and Pineapple Cake:

Step 1. Preheat oven to 180 degrees celsius and line a 15 x 25cm loaf tin with baking paper.
Step 2. Mash the banana and add the crushed pineapple and coconut oil. Mix to combine.
Step 3. Add the remaining ingredients and mix until just combined. Please note the mixture will be a little lumpy.
Step 4. Transfer the batter to the prepared baking tin and bake until golden and cooked through when tested with a skewer.
Step 5. Allow the cake to cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.
Tips for Making this Banana and Pineapple Cake:
It’s important to drain the excess pineapple juice, otherwise your loaf will be very soft in the centre.
You will need two small bananas for this recipe. The browner the bananas, the better.
This recipe is freezer friendly.
You can make this recipe in a different size cake tin, however please not that the cooking time will vary.
You could add a simple icing to this loaf but I prefer it without and it sure tastes delicious when eaten warm with a glass of milk.
This recipe makes a large loaf, so I like to cut each slice in half for the kids, this also makes it the perfect size for a lunch box treat.

Banana and Pineapple Cake
Equipment
- 1 x 15 x 25cm loaf tin
- baking paper
Ingredients
- 2 bananas 150 grams
- ½ cup crushed pineapple – drained 100 grams
- 2 teaspoons ground cinnamon
- 1 & ¼ cups caster sugar 270 grams
- 1 & ⅔ cups self raising flour 250 grams
- ¼ cup coconut 40 grams
- ⅔ cup coconut oil 130 grams
- ¼ cup pineapple juice 70 grams
- 2 eggs
Instructions
- Preheat oven to 180 degrees celsius (fan-forced) and line a 15 x 25cm loaf tin with baking paper.
- Peel and mash the bananas in a large mixing bowl, then add the pineapple, cinnamon, coconut and sugar.
- Sift the flour into the bowl and use a wooden spoon to mix the ingredients together.
- In a medium bowl, stir the oil, juice and eggs together with a fork and pour into the banana mixture. Stir until all ingredients are combined.
- Pour mixture into a loaf tin, smooth the top and bake in the oven for 45 minutes or until cooked through.
Thermomix instructions
- Preheat oven to 180 degrees celsius (fan-forced) and line a 15 x 25cm loaf tin with baking paper.
- Add the banana, coconut oil and crushed pineapple to a Thermomix bowl and mix for 10 seconds, speed 4.
- Add the remaining ingredients and mix for 10 seconds, speed 5.
- Scrape down the sides of the bowl and mix for a further 10 seconds, speed 4.
- Follow instructions from Step 5 above.
