    For a quick and easy Christmas treat, you can’t go wrong with these Vanilla Christmas Cupcakes! Both regular and instructions included.

    My boys love helping me bake in the lead up to Christmas, and this recipe is almost simple enough for them to make on their own – with supervision of course! These Christmas Cupcakes are based on my favourite cupcake recipe that we have been making for years and then decorated with red and green M&M’s and cute Christmas Cupcake toppers purchased from Peach and Pine.

    I kept the icing plain for these cupcakes, however you can also colour it with food dye and you can even make buttercream icing if your prefer.  While it’s always fun to make out there recipes loaded with chocolate and lots of other yummy ingredients, sometimes it’s also even more fun to go with a simple recipe which uses ingredients you will likely already have.

    As you can see above, the boys weren’t shy when it came to adding the M&M’s to our cupcakes, however I do think more were consumed by them during the process than what made it onto our actual cakes!  If you are looking for some more Christmas recipes to make with the kids, you can find them here.

    Tips for Making these Vanilla Christmas Cupcakes

    • It’s important to make sure your butter is at room temperature before you start putting this recipe together. If it’s still too hard, the mixture will not combine and it will take longer to mix.
    • You can freeze these cupcakes – minus the M&M’s.
    • Instead of using a plain icing like I have, you can colour the icing mixture with food dye or make a buttercream icing to go on top.
    • These cupcakes look great simply decorate with M&M’s, however if you do want to add these cute Christmas Cupcake Toppers, I purchased them from Peach and Pine.

    Ingredients
      

    • 125 grams butter softened
    • ⅔ cup caster sugar
    • 1 and ½ cups self raising flour
    • ½ cup milk
    • 2 teaspoons of vanilla extract
    • 2 eggs

    For the Icing

    • 1 and ½ cups icing sugar mixture
    • 1 tbsp butter softened
    • 2 - 4 tablespoon boiling water
    • Red & Green M&M's to decorate

    Instructions
     

    • Preheat the oven to 180 degrees, and line a 12 hole muffin tray with paper cases.
    • Put the softened butter, sugar, flour, milk, vanilla and eggs in a bowl and beat with electric beaters on a low speed for 2 minutes or until well mixed
    • Increase speed and beat for a further 2 minutes or until smooth and pale
    • Spoon mixture into the cupcake tray and bake for 18 -20 minutes or until golden and cooked through.
    • Allow to cool completely on a wire rack
    • Once cooled, to make the icing, combine the icing sugar ingredients into a small bowl. Add the water a tablespoon at a time and mix until it's just spreadable.
    • Top the cupcakes with the icing and decorate with M&M's.

    Notes

    These cupcakes are freezer friendly iced or un-iced.

    • Thermomix

    Ingredients
      

    • 125 grams butter softened
    • 160 grams caster sugar
    • 225 grams self raising flour
    • 130 grams milk
    • 2 teaspoons of vanilla extract
    • 2 eggs

    For the Icing

    • 1 and ½ cups icing sugar mixture
    • 1 tbsp butter softened
    • 2 - 4 tablespoon boiling water
    • Red & Green M&M's to decorate

    Instructions
     

    • Preheat the oven to 180 degrees, and line a 12 hole muffin tray with paper cases.
    • Place the butter, caster sugar, self raising flour, eggs, milk and vanilla extract into your Thermomix bowl and mix for 15 seconds, speed 5.
    • Scrape down the sides of the bowl and mix for a further 10 seconds on speed 4 or until smooth and creamy.
    • Spoon mixture into the cupcake tray and bake for 18 -20 minutes or until golden and cooked through.
    • Allow to cool completely on a wire rack
    • Once cooled, to make the icing, combine the icing sugar ingredients into a small bowl. Add the water a tablespoon at a time and mix until it's just spreadable.
    • Top the cupcakes with the icing and decorate with M&M's.
