We recently celebrated out Big Boy’s third birthday with a ‘Fire Engine’ themed party. Even after scouring pintrest for HOURS, I was still struggling to come up with party food ideas. Eventually I decided the easiest (and yummiest) way, was to stick with a theme of red, orange and yellow food – and what better way to embody this theme then with Jelly Slice?
After spying strawberries on special, I decided to make my slice a little fancy and include them in the topping – although several of the kids (and my 28 year old sister) did insist on picking the strawberries out of the jelly, the majority of adults who tried the slice really enjoyed it.
I did make this Jelly Slice in my Thermomix, however I’ve also made it the ‘regular’ way in the past and either way, it really doesn’t take much time or effort to put it together. I do have one big tip, make sure you have enough space in the fridge before you tried to place the completed slice in there – juggling a tray containing unset jelly with one hand, while you frantically clear room in an over crowded fridge is NOT a good idea.
Jelly Slice
Ingredients
- 200 g of Marie biscuits or any other plain biscuit will be fine.
- 225 g of milted butter
- 395 g can of condensed milk
- 2 ½ teaspoons of gelatine
- ¾ cup of boiling water
- 2 Lemons - juiced
- 1 packet to strawberry jelly
- Boiling Water as per packet instructions
- 1 teaspoon of gelatine - extra for the jelly top
- 250 g of fresh strawberries - halved
Instructions
- Line the base and the sides of a slice tin with baking paper, making sure you leave plenty hanging over the sides.
- Crush the biscuits, either in a food processor or with a rolling pin by hand until they resemble fine breadcrumbs.
- Add the melted butter to the crushed biscuits and mix until combined. Pour the mixture into the lined slice tine and press down with the back of a metal spoon until level and place in the fridge to set.
- Meanwhile, add 2 1/12 teaspoons of gelatine to ¾ of a cup of boiling water and stir until it has dissolved. Place the condensed milk into a bowl and while whisking, add the dissolved gelatine mixture and the lemon juice. Continue to whisk until mixture is well combined.
- Remove the set biscuit base from the fridge and pour over the condensed milk layer. Place back in the fridge, until it just begins to start to set - approximately half an hour.
- Make the strawberry jelly as per the packet instructions - adding an extra teaspoon of gelatine. Allow the jelly to cool until it has reached room temperature. Cut the strawberries in half lengthways.
- Remove the slice from the fridge and arrange the strawberries over the top of the slice - gently push them into the slice to help stop them moving when you add the jelly.
- Carefully pour the jelly over the slice and place it back in the fridge to completely set approximately 4 hours - overnight is best.
- Remove the set slice from the fridge and using a hot knife, cut into squares.

Thermomix Strawberry Jelly Slice
Ingredients

- 2 ½ teaspoons of gelatine
- ¾ cup of boiling water
- 2 Lemons - juiced
- 1 packet strawberry jelly
- Boiling Water as per packet instructions
- 1 teaspoon of gelatine - extra for the jelly top
- 250 g of fresh strawberries - halved
Instructions
- Line the base and the sides of a slice tin with baking paper, making sure you leave plenty hanging over the sides.
- Place the biscuits in the bowl and crush for 5 seconds on speed 9.
- Add the butter and heat for 3 minutes on 80 degrees speed 2.
- Remove biscuit mixture from the bowl and pour into the lined tray. Push the mixture down with a metal spoon to create a flat surface. Place in the fridge for 30 minutes to set.
- To make the filling, combine the gelatine in a jug with the boiling water and allow to cool slightly. In a clean bowl, add the lemon juice and condensed milk and mix for 45 seconds on speed 4. After 5 seconds, remove the measuring cup and carefully pour the gelatine mixture in. Remove the set slice base from the fridge and pour over the filling. Put back into the fridge for 30 minutes.
- In a clean bowl, add the hot water and heat for 3 minutes on 90 degrees speed 2. Add the jelly crystals and stir until they have dissolved. Pour jelly into another bowl and allow it to cool until it has reached room temperature.
- Remove the slice from the fridge and arrange the strawberries over the top of the slice - gently push them into the slice to help stop them moving when you add the jelly.
- Carefully pour the jelly over the slice and place it back in the fridge to completely set approximately 4 hours - overnight is best.
- Remove the set slice from the fridge and using a hot knife, cut into squares.

I can honestly say I’ve never made a jelly slice Lauren, you’ve definitely got me wanting to now. Love that you dobbed your sister in for picking out the strawberry, when I make apple crumble my little sister only eats the crumble?
I had your fridge experience today, only it was trying to find places quickly for cupcakes iced with butter cream, they were starting to droop while sitting out on the bench, I did turn onto a bit of a crazy lady!

I tried to make a blue one of these for Esther’s Frozen party and when I poured the jelly mixture over the condensed milk part, it soaked into the slice. I need to obviously add a teaspoon of extra gelatin to the jelly mixture? I love how this slice looks with the strawberry on top. 🙂

The extra gelatine helps it set a bit better and it’s also a good idea to let the jelly cool a bit so it’s at around room temperature but still liquid.
