These Spinach and Three Cheese Triangles (yep, you read that right!!) are the ULTIMATE in easy and delicious party finger food. I decided to give these a try after hearing great feedback from a few people who had added feta to my Spinach and Ricotta Rolls recipe and I was certainly not disappointed.
Along with Ricotta and Feta, these crunchy and very moreish little pastry parcels also have parmesan cheese, onion flakes and a little nutmeg for some extra flavour. I couldn’t help but sampling one while taking these photos and my little helper was also impressed with them.
As well as being a great party food item, these Spinach and Three Cheese Triangles are also great for an easy lunch, served with a side of salad. They are also freezer friendly and I’m already planning to take one out for my lunch tomorrow!
When adding the filling for the triangles, try to arrange it so that it spreads down into the corner of the triangle, that way you get more of the delicious filling with every bite.
Spinach and Three Cheese Triangles
Ingredients
- 250 g of ricotta
- 100 g of feta
- 50 g of parmesan cheese finely grated
- 80 g of baby spinach leaves
- 1 egg
- 3 sheets of puff pastry – partially thawed
- 1 teaspoon of nutmeg
- 1 teaspoon of onion flakes
- salt and pepper
- poppy seeds – optional
- 1 egg to brush the rolls with.
Instructions
- Line your two trays with baking paper and preheat your oven to 210 degrees.
- Place the ricotta, feta, grated parmesan cheese, baby spinach leaves, 1 egg, nutmeg, onion flakes and salt and pepper into a large bowl and stir until all of the ingredients have combined.
- Break the extra egg into a small bowl and lightly whisk.
- Place the partially thawed pastry sheets onto your bench and cut in half diagonally and then again so that you have four triangles.
- Brush each edge of the pastry with a little of the egg before adding approximately 2 tablespoons of the three cheese filling to the triangle. Try to arrange your three cheese filling so that when you fold the pastry over to cover it, the filling is spread out evenly.
- Fold the pastry in half to enclose the filling and use the edge of a fork to push the open sides of the pastry together.
- Brush with a little of the egg and sprinkle with poppy seeds if desired.
- Repeat process until all the pastry and three cheese mixture has been used - you may find you have enough filling leftover for a fourth sheet of pastry.
- Place the Spinach and Three Cheese Triangles into the oven to cook for 25 minutes or until the pastry is golden and crispy.
- Serve immediately

Spinach and Three Cheese Triangles Thermomix Instructions

- Cut the parmesan cheese into cubes no bigger than 3cm and place in your Thermomix bowl to mix for 10 seconds on speed 9 to grate.
- Add the ricotta, feta (broken into large pieces), baby spinach leaves, 1 egg, nutmeg, onion flakes and salt and pepper to your Thermomix bowl and mix for 15 seconds on speed 4 or until all of the ingredients have combined.
- Break the extra egg into a small bowl and lightly whisk.
- Place the partially thawed pastry sheets onto your bench and cut in half diagonally and then again so that you have four triangles.

I have people coming over in a couple of days. I want to make these ahead and then reheat on the day. Shall I bake then freeze? or prepare ready and then just cook on the day? If I freeze them and reheat with the puff pastry go soggy?

Hi Sheila, You can make these in advance and freeze. I usually cook them as per the recipe and then freeze, to reheat, simply cook them for 15 minutes or so (time will depend on the size of your triangles) to warm up. If you don’t want the pastry to brown any further, just cover them with foil, I hope that helps 🙂

We make a cheese pie here which is a twist on my FIL’s recipe… which I have just realised I’ve never put up on the blog.. hmm think I’ll have to change that.
