Gozleme is one of those recipes that may seem like it requires a lot of effort, but I truly promise you that it does not! To make, you need a few basic ingredients
Gozleme Ingredients:
To make your Gozleme Dough, you will need:
- Yeast
- Flour
- Water
- Salt
- Sugar
Once you’ve combined your dough ingredients, let the dough rest for half an hour or so (or until it’s doubled) and then it’s time to roll it out and add your favourite fillings! If you want to freeze the dough so you can continue to make these Gozlemes at another time, you can also do that at this point.

Along with this Spinach and Cheese Filling, you can add pretty much any type of filling you like to your Gozleme, a few of our favourites include:

My Tips for Making the BEST Gozleme:
- You can double this recipe. Please ensure you do not exceed the ‘maximum fill’ line if making in a Thermomix.
- If you find your dough is too sticky, add a little extra flour to it when dividing into four.
- I like to cook my Gozleme in ghee (I use the recipe from Cookidoo to make mine) but you can also use extra virgin olive oil.
- The cooked Gozleme can be frozen.
- You can play with the quantities of of cheese if you wish. We also love these gozlemes with a sprinkle of parmesan cheese too.

How to Make Spinach and Cheese Gozleme
Equipment
- 1 x Frying Pan
Ingredients
- 7 grams dried instant yeast
- 300 ml warm water
- pinch salt
- 1 teaspoon sugar
- 3 cups plain flour 450 grams
- 50 grams baby spinach leaves Approximately 2 cups
- 200 grams feta
Instructions
- Combine the warm water, yeast, salt and sugar in a jug and gently stir with a fork.
- Place a tea towel over the top and sit in a warm and sunny place for 5 minutes or until bubbles start to form on the surface.
- Place the flour in a large bowl an add the yeast mixture. Use a butter knife to stir to combine before transferring to a lightly floured bench and knead for 5 – 6 minutes or until smooth and elastic.
- Divide the dough into four portions and place onto an oven tray before covering with a tea towel. Sit in a warm spot for 20 – 30 minutes or until the dough has doubled in size.
- Punch down the down and roll into a thin rectangle, add approximately ¼ of the baby spinach leaves and feta to half of the dough and cover. Pinch the edges of the dough together to seal.
- Place 2 tablespoon of olive oil (or ghee) into a frying pan over a medium heat and cook for 2 – 3 minutes on each side.
Thermomix Instructions
- Place the yeast, water and caster sugar into your Thermomix bowl and cook for 3 minutes, 37 degrees, speed 2.
- Add the salt, plain flour and olive oil and mix for 10 seconds, speed 4.
- Select the kneading function and knead for 4 minutes.
- Tip the dough onto your bench and roll into a ball. Divide into 4 pieces and cover either with your Thermomat or place into an oiled bowl and cover with a clean tea towel. Sit in a warm spot for 30 minutes to allow the dough to double in size.
- Punch down the down and roll into a thin rectangle, add approximately ¼ of the baby spinach leaves and feta to half of the dough and cover. Pinch the edges of the dough together to seal.
- Place 2 tablespoon of olive oil (or ghee) into a frying pan over a medium heat and cook for 2 – 3 minutes on each side.
- Repeat until all the dough and filling has been used.
Notes
