We recently were given the green light to bring along food containing Peanut Butter to kindy and to say our little guys was excited is an understatement! These homemade Peanut Butter and Honey Muesli Bars are deliciously soft and chewy and can be adapted to suit your taste and preferences.
Both of our boys LOVE muesli bars and are also big fans of this Muesli Slice recipe. If they had their way, they could easily eat 2 -3 a day which not only is expensive but is also filling them with a lot of things they don’t really need. While these homemade Peanut Butter and Honey Muesli Bars are not overly ‘healthy’ at least I know what goes into them and it’s ways to amend the recipe if needed. If you want to cut down on the sweetness, you can substitute the honey for rice malt syrup. If sultanas are not your thing or you would prefer a bit more of a crunch, you can easily add your favourite nuts (we love walnuts) and other dried fruit to the mix.
This recipe makes approximately 10 muesli bars or you can turn it into a slice by cutting it into smaller pieces – you will get around 20. I find it’s a great treat for our little guy’s lunch box or to help satisfy his ridiculous appetite in the lead up to dinner.
Homemade Peanut Butter and Honey Muesli Bars
Ingredients
- 1 ½ cups 125g of rolled oats
- 1 cup 40g of rice bubbles
- ⅓ cup 40g of wholemeal flour
- ½ cup 40g of desiccated coconut
- ⅔ cup 90g of brown sugar
- 1 cup of sultanas
- 120 g of butter
- ½ cup 130g of peanut butter
- ½ cup 160g of honey
- 1 teaspoon of vanilla essence
Instructions
- Line a 28cm x 18cm slice tin with baking paper (making sure you leave plenty hanging over the sides) and preheat your oven to 170 degrees.
- In a large bowl, add the rolled oats, rice bubbles, wholemeal flour, coconut and sultanas. Set aside until needed.
- Place the butter, honey and peanut butter into a small saucepan and cook over a medium heat until melted and combined.
- Once melted, reduce the heat to low and add the brown sugar and vanilla essence and stir to combine.
- Pour the melted ingredients into the bowl with the dry ingredients and stir to combine.
- Pour the mixture into your slice tin (don't worry it will be quite sticky) and push down with the back of a metal spoon to flatten.
- Put the homemade Peanut Butter and Honey Muesli Bars into the oven and bake for 30 minutes or until golden brown.
- Allow the muesli bars to cool in the tray for 20 minutes before transferring to a wire rack to cool completely.
- Once completely cooled, cut into bars and store in an airtight container.

Thermomix Homemade Peanut Butter and Honey Muesli Bars Instructions

- Place the butter, peanut butter and honey into your Thermomix bowl and cook for 2 minutes, 80 degrees, speed 2 or until melted.
- Add the brown sugar and vanilla and mix for 20 seconds on speed 2.
- Add the rest of the ingredients and mix for 15 seconds, speed 3 REVERSE or until the mixture has combined.
- Pour the mixture into your slice tin (don’t worry it will be quite sticky) and push down with the back of a metal spoon to flatten.
- Put the homemade Peanut Butter and Honey Muesli Bars into the oven and bake for 30 minutes or until golden brown.
- Allow the muesli bars to cool in the tray for 20 minutes before transferring to a wire rack to cool completely.
- Once completely cooled, cut into bars and store in an airtight container.

These looked great but were way too sweet. You cant even eat them they are so sweet. I would probably cut the sugar out entirely next time.

Got really excited about the bars and have made them. I must be honest and say they are incredibly sweet with the honey and sugar. Any chance of decreasing the sugar content?

I’m sorry to hear that Nicole, I think you could definitely reduce the sugar to suit your taste. I’d try reducing it by a third to begin with 🙂
