This Easy Apple Pie Recipe is the ultimate family dessert!
Growing up, Apple Pie was always our go to desert for special occasions and it’s a tradition I have continued now with a family of my own. With Mother’s Day coming up this weekend, this dessert is perfect to put together to enjoy at home with your family or cook together using technology with your mum.
We usually go out for an adventure and a meal on Mother’s Day, however as that can’t happen this year, I’m instead going to put my husband and the kids to work on creating this sentimental family dessert to go alongside a home delivered meal from my favourite restaurant as just because the day will look a bit different, it doesn’t mean that we can’t still celebrate and enjoy our time together as a family. There will still be some normality to the day, with facetime calls to all of our family who live interstate and I’ve got my fingers crossed for some quiet time for me too.
There may be a few steps to this recipe, but it is actually quite simple to put together and you can make it even easier if you wish, by using store bought pastry (we like the Woolworths Brand Shortcrust Pastry) and Tinned Apples (we used 2 x 770gram tins of Woolworth Apple Slices Pie Fruit). They even have some Mother’s Day cards you can download for the kids (or you!) to colour in and send to Mum, a great way to help stay connected even if we have to spend the day apart from our families, or perfect if your husband hasn’t organised cards from the kids yet 😉
My boys enjoy helping in the kitchen (especially when we are making desserts!) and there are lots of steps in this recipe that are perfect for little helpers – as you can see in this video below 😉 The kids will love helping to mix and then add the apple mixture – just make sure they don’t eat too much of it in the process and why not let them decorate the top of your pie with some pastry pieces cut using cookie cutters?

To make this Apple Pie just that little bit ‘fancy’ I like to decorate the top with strips of puff pastry, however you can certainly use a single piece of puff or shortcrust pastry for the top if you prefer. Just make sure you pop a couple of small cuts into the pastry to help the steam escape during cooking.

- This pie can be prepared several hours in advance and then stored (covered) in the fridge until ready to be baked.

Easy Apple Pie
Equipment
- 22cm Pie Tin
Ingredients
For the Pastry
- 2 cups Plain Flour
- 3 tablespoon caster sugar
- 150 grams butter chilled and chopped
- 4 - 5 tablespoon icy cold water
- 2 tablespoon caster sugar extra
- 1 egg beaten
- 1 sheet Puff Pastry
Alternatively, you can also use 2 sheets of Woolworths Shortcrust Pastry.
Pie Filling
- 2 x 770 gram tins Woolworths Apple Slices Fruit
- 1 teaspoon cinnamon
- 1 teaspoon all spice
- 2 tablespoon plain flour
Alternatively you can make your own pie filling with:
- 8 Granny Smith Apples peeled and cored
- 2 teaspoon lemon juice
- 2 tablespoon water
- ¼ cup brown sugar
- ¼ cup caster sugar
Instructions
To Make the Pastry - Conventional Method
- Place the chopped butter, flour and caster sugar into a large bowl. Use your fingertips to rub the butter into the flour/sugar until the mixture resembles breadcrumbs.
- Add 3 - 4 tablespoons of water and use a butter knife to mix the dough until it starts clumping together.
- Transfer the dough to a surface dusted with flour and knead until it forms a smooth dough.
- Place into the fridge to chill for at least 30 minutes.
- In the meantime, prepare your apple mixture by transferring the Woolworths Apple Slices Pie Fruit into a large bowl.
- Add the cinnamon, mixed spice and flour and gently fold through to combine.
- If you are making your own apple mixture, peel and core your apples before chopping them into ⅛ths.
- Place them into a medium saucepan along with the lemon juice, water, sugars, cinnamon, mixed spice and flour and cook over a medium heat for 5 - 7 minutes or until the apples just give when sliced with a knife. Set aside to cool.
- Preheat your oven to 200 degrees celsius (fan forced) and lightly grease a 24 cm pie dish and set aside until needed.
- Remove the pastry dough from the fridge and roll out until it’s approximately 3 mm thick and large enough to cover your pie dish.
- Carefully transfer to the pie dish and trim the excess dough.
- Drain the excess fluid from the apple mixture and place inside the pastry.
- Slice a sheet of Woolworths Puff Pastry into strips and then place on top of the apple mixture in a criss cross pattern.
- Brush the lightly beaten egg over the top of the pie and sprinkle over the caster sugar.
- Place into your preheated oven to bake for 35 - 45 minutes or until the pastry is golden.
Thermomix Instructions
- To prepare pastry, place the flour, butter and caster sugar into your Thermomix bowl and mix for 10 seconds, speed 7 to combine.
- Select the kneading function and mix for 3 minutes.
- Wrap the dough and place into the fridge for at least 30 minutes to chill.
If making your own apple mixture
- Place the apple slices into the Varoma dish.
- Fill the Thermomix bowl with 500 grams of water and cook for 15 minutes, Speed 2, Varoma temperature.
- Sprinkle over the sugar, lemon juice and cinnamon and mix to combine - alternatively, follow the instructions from step 5 from the conventional cooking method.
- Preheat your oven to 200 degrees celsius (fan forced) and lightly grease a 24 cm pie dish and set aside until needed.
- Take the pastry out of the fridge and on a lightly floured bench, roll it out until approximately 3mm thick or large enough to cover the base and sides of your pie dish.
- Place the pastry over the pie dish and press down so that it covers the base and sides.
- Drain any excess liquid from the apple mixture and add to the pie dish and spread out evenly.
- Slice a sheet of Woolworths Puff Pastry into strips and then place on top of the apple mixture in a criss cross pattern.
- Brush the lightly beaten egg over the top of the pie and sprinkle over the caster sugar.
- Place into your preheated oven to bake for 35 - 45 minutes or until the pastry is golden.
