    This easy Chocolate Cupcake recipe is based on my all time favourite Chocolate Cake recipe, and I promise you cannot go wrong making it!

    How to Make this Easy Chocolate Cake Recipe

    We’ve been making my Nan’s Chocolate Cake recipe for as long as I can remember, it’s practically a staple in our house!  While there is nothing better than slicing off a thick piece of her Chocolate Cake to enjoy, these easy Chocolate Cupcakes make a great alternative, especially for the kids.

    Easy Chocolate Cake Recipe

    This recipe is simply my original Chocolate Cake recipe baked as cupcakes. You will get 12 cupcakes from this mixture and you can also turn these into mini muffins and will get around 24 cupcakes that way.  You can enjoy these Chocolate Cupcakes fresh from the oven while they are still warm, however it’s also well worth waiting until they have cooled and then topping them with Chocolate icing – you can find the recipe here.

    Tips for How to Make these Easy Chocolate Cupcakes:

    • You can also cook this recipe in a cake tin – the cooking time will increase to approximately 30 minutes or longer depending on the cake tin that you use.
    • This recipe is freezer friendly – either iced or un-iced.

    Ingredients
      

    • 90 g butter
    • 2 tablespoons of cocoa
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 175 grams caster sugar Approximately 1 cup and 2 tablespoons
    • 175 grams self raising flour Approximately ⅔ cup
    • ½ cup milk

    Instructions
     

    • Preheat your oven to 180 degrees (fan forced) and line a muffin tray with 12 paper cases.
    • Melt the butter in the microwave and set aside to cool slightly.
    • Sift flour and cocoa into the bowl of an electric mixer, then add all the other ingredients.
    • Beat for approximately 3 minutes until ingredients have all combined and the mixture is smooth.
    • Divide the mixture amongst the cupcake cases and bake for 15 - 18 minutes or until a skewer inserted in the middle comes out clean.
    • Allow the cupcakes to cool in the tin for five minutes before transferring to a wire rack to cool completely.

    These easy Thermomix Chocolate Cupcakes are simple to make, freezer friendly and great for a treat or your next party.

    Ingredients
      

    • 90 g butter
    • 2 tablespoons of cocoa
    • 2 eggs
    • 1 teaspoon of vanilla essence
    • 175 g of caster sugar
    • 175 g of self raising flour
    • 130 grams of milk

    Instructions
     

    • Preheat your oven to 180 degrees (fan forced) and line the a muffin tray with paper cases.
    • Place the butter (which has been cubed) into your Thermomix bowl and melt for 2 minutes at 65 degrees on speed 2.
    • Add the self raising flour, cocoa, caster sugar, eggs, milk and vanilla essence to your thermomix bowl and mix for 5 seconds on speed 4 before scraping down the sides and mixing for a further 7 seconds on speed 4 or until combined.
    • Divide the mixture amongst the paper cases and bake for 15-18 minutes or until a skewer inserted in the middle comes out clean.
    • Allow the cupcakes to cool in the tin for five minutes before transferring to a wire rack to cool completely.
