    I think these Lemon and Coconut Blondies may just be my new favourite Lemon Slice recipe!

    Lemon and Coconut Blondies

    I came across a recipe for Lemon Brownies when I was enjoying some child free time (which is VERY rare these days!) at the hairdresser a few weeks ago.  As I still had a couple of kilos of lemons that I needed to use, I knew exactly what I was going to make next.

    In another happy coincidence, my Nan was staying with us at the time and was more than willing to be my taste tester!  After tasting the mixture, we both decided that it needed extra lemon juice and rind added (after all you can’t have enough lemon flavour!) and then once cooked, we thought a lemon icing would make these Lemon and Coconut Blondies that extra special.

    While the extra lemons helped to give this slice a stronger flavour, it was still mild enough that the boys were happy to lick the bowl once I’d finished making them (which is always their favourite part of helping me in the kitchen!) and they also gave the finished product a big thumbs up – I even had to edit their little hands trying to grab a piece of slice from the photos for this post!

    Lemon and Coconut Blondies

    Along with tasting ah-mazing (even better than my Lemon and Coconut Slice – seriously!) this Lemon and Coconut Blondie recipe can be made using just one saucepan (or a Thermomix bowl!) making it a super speedy and easy recipe to whip up in no time.

    Easy Lemon and Coconut Blondie Recipe

    Lemon and Coconut Blondies

    You just need one saucepan to make these yummy Lemon and Coconut Blondies and they are also super simple to make using a Thermomix too!

    Ingredients
      

    • 250 g of butter
    • 2 cups 440g of caster sugar
    • 4 eggs
    • 1 ½ cups 225g of plain flour
    • 1 cup 85g of desiccated coconut
    • 4 teaspoons of lemon rind
    • 80 ml ⅓ cup of lemon juice
    • Icing
    • 45 g of butter - soft
    • Grated rind of ½ a lemon
    • 1 tablespoon of lemon juice
    • 1 ⅓ cups icing sugar mixture
    • ¼ cup of desiccated coconut - extra

    Instructions
     

    • Preheat your oven to 180 degrees and line a 20cm x 20cm cake tin with baking paper.
    • Cut the butter into cubes and place into a large saucepan over a medium heat. Cook for 3 minutes or until the butter has melted.
    • Remove the saucepan from the heat and add the caster sugar and stir until combined.
    • Add the eggs one at a time and whisk until the mixture becomes shiny.
    • Sift the flour over the top of the mixture and stir to combine.
    • Add the coconut, lemon rind and lemon juice and mix through.
    • Pour the mixture into your prepared baking tin and cook for 35 minutes or until golden on top and the centre has just cooked through when tested with a skewer.
    • Let the Lemon and Coconut Blondies cool completely in the tin before combing the ingredients for the icing (apart from the coconut) into a small bowl. Pour the icing over the top of the cooled blondies and allow it to set before cutting into pieces to serve.

    Notes

    Adding the icing to the top of these Lemon and Coconut Blondies is optional, but totally worth it!
    If the icing is too thick, add 1 teaspoon of water

    Thermomix Lemon and Coconut Blondies Recipe

    1. Preheat your oven to 180 degrees and line a 20cm x 20cm cake tin with baking paper.
    2. Cut the butter into cubes and and place into your Thermomix bowl. Add the caster sugar and cook for 3 minutes, 60 degrees, speed 2.
    3. Add the eggs and mix for 10 seconds, speed 4.
    4. Add the flour, coconut, lemon rind and lemon juice and mix for 10 seconds, speed 4. Scrape down the sides and mix for a further 10 seconds, speed 4 to combine.
    5. Pour the mixture into your prepared baking tin and cook for 35 minutes or until golden on top and the centre has just cooked through when tested with a skewer.
    6. Let the Lemon and Coconut Blondies cool completely in the tin before combing the ingredients for the icing (apart from the coconut) into a small bowl. Pour the icing over the top of the cooled blondies and allow it to set before cutting into pieces to serve.
