    Carrot Cake Slice Recipe

    I’ve been on a bit of a roll when it comes to carrot recipes lately and this Carrot Cake Slice with Cream Cheese Frosting is my latest creation.  It contains all of my favourite carrot cake ingredients (especially cream cheese frosting!) in a yummy little slice and best of all my kids love it too!

    Carrot Cake Slice Recipe

    Since first making this slice, I’ve also made a version where I omitted the walnuts and frosting so that Mr 5 could take it to school.  Also when it’s un-iced, you can keep a batch in the freezer for a handy snack whenever you get a sweet craving (which happens to me quite a bit!) or you have run out of snacks for the kids – another thing that seems to be happening more of  lately in our house!

    Carrot Cake Slice Recipe

    While this recipe is based on a traditional Carrot Cake, be aware it’s a little heavier and more dense – which certainly isn’t a bad thing.  I like to cut this slice into small pieces (not only so I feel less guilty when I eat a few pieces at a time!) but also because it makes a special snack for the kids.

    Carrot Cake Slice

    This Carrot Cake Slice is a simple recipe that the whole family will love. When un-iced it is freezer friendly and it can also be made using a Thermomix.

    Ingredients
      

    • 150 g melted butter
    • 1 ? cup 200 g self raising flour
    • 1 cup 200g brown sugar
    • 2 tablespoon desiccated coconut
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • ¾ cup grated carrots - approximately 2 medium carrots
    • ½ cup 50g walnuts
    • ¼ cup 40g sultanas
    • ¼ cup 30g currants
    • For the icing
    • 250 g of cream cheese - softened
    • 180 g of butter - softened
    • 220 g of icing sugar
    • 1 teaspoon of vanilla extract

    Instructions
     

    • Preheat your oven to 180 degrees and line a 28 x 18cm slice tin with baking paper. Make sure you leave paper hanging over the sides of the tin to help you remove the slice once it’s cooked.
    • Roughly chop the walnuts and place them along with all of the other slice ingredients into a large bowl and mix with a large spoon until combined.
    • Pour the Carrot Cake Slice mixture into your prepared tin and bake for 30 - 35 minutes or until the top of the slice is golden and cooked through when tested with a skewer. Carefully remove the slice from the oven and allow it to cool completely in the tin.
    • To make the cream cheese icing, place the softened cream cheese and butter into the bowl of an electric mixer and beat on a medium speed for 3 minutes until combined. Scrape down the sides of the bowl and add the icing sugar and vanilla extract and mix on a low speed for 1 minute before increasing the speed to high and mix for a further 3 minutes until the mixture is well combined.
    • Use a butter knife to spread the icing over the top of the slice and place it into the fridge for 30 minutes to firm.
    • Carefully remove the slice from the tin (using the excess baking paper as ‘handles’) and cut the slice into pieces.

    Notes

    You will need 2 medium carrots for this recipe
    This slice can be frozen when it's un-iced.

    Thermomix Carrot Cake Slice Instructions

    1. Preheat your oven to 180 degrees and line a 28 x 18cm slice tin with baking paper. Make sure you leave paper hanging over the sides of the tin to help you remove the slice once it’s cooked.
    2. Cut the carrots into 3cm pieces and place into your Thermomix bowl. Mix for 4 seconds, speed 5 to grate. If you would like your carrot pieces smaller, mix for a further 3 seconds, speed 5. Transfer to a new bowl and set aside until needed.
    3. Without washing the bowl, place the walnuts into your Thermomix bowl and mix for 3 seconds, speed 3 to crush.
    4. Add the butter (which has been cut into cubes) and cook for 2 minutes, 60 degrees, speed 2 REVERSE to melt.
    5. Add the grated carrot along with all of the other slice ingredients to your Thermomix bowl and mix for 10 seconds, speed 4, REVERSE to combine. Scrape down the sides of the bowl and mix for a further 5 seconds, speed 4, REVERSE.
    6. Pour the Carrot Cake Slice mixture into your prepared tin and bake for 30 – 35 minutes or until the top of the slice is golden and cooked through when tested with a skewer. Carefully remove the slice from the oven and allow it to cool completely in the tin.
    7. To make the cream cheese icing, place all of the ingredients into your Thermomix bowl and mix for 20 seconds on speed 5. Scrape down the sides of the bowl and mix for a further 20 seconds on speed 5.
    8. Use a butter knife to spread the icing over the top of the slice and place it into the fridge for 30 minutes to firm.
    9. Carefully remove the slice from the tin (using the excess baking paper as ‘handles’) and cut the slice into pieces.

      Hi!
      I just made this – I omitted the walnuts, currants and Sultanas. I substituted with about 70gms LSA. Cake is probably more crumbly I’d imagine than normal but it’s delicious!!

      Omg this is the best carrot cake I have ever had! Seriously delicious. It’s hard not to have more than one piece lol. Thank you 🙂
      I want to make a carrot cake for my toddler to take to preschool. Could I just half the sugar to 1/2 a cup and halve the icing sugar and cream cheese? Would it be ok to put less butter in to? X

      Made this today in my thermomix and it was delicious! Didn’t have any walnuts unfortunately so omitted them from the recipe. Only used 150g sugar which was sweet enough. And didn’t make the icing but it didn’t need it. Was surprised at how moist it was as it seemed quite dry and sticky being difficult to spread before cooking. A winner in our household and will definitely be making again. Thank you
