Equipment

  • 1 x 22cm round pie dish

Ingredients

  • 250 grams shaved ham chopped into pieces
  • 200 grams corn kernels
  • 1 brown onion - finely diced
  • 2 garlic cloves - crushed
  • 100 grams cheese - grated. Approximately 1 & ½ cups
  • cup self raising flour 50 grams
  • 5 eggs
  • 1 ½ cups milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Lightly grease a 5 cup capacity pie dish and preheat your oven to 200 degrees celsius (fan-forced)
  • Roughly chop shaved ham and sprinkle over the base of the pie dish.
  • Add the finely diced brown onion, corn kernels, grated cheese and flour and gently stir through until all of the ingredients have been coated in flour.
  • In a large jug, whisk together the eggs, milk, crushed garlic and a pinch of salt and pepper before carefully pouring it over the mixture in the pie dish.
  • Place the pie dish into the oven and cook for 45 minutes or until the Ham, Corn and Cheese Impossible Pie has risen and it golden on top.

Notes

You can use fresh or tinned corn kernels for this recipe, however if using corn kernels from a can, make sure they have been drained well.
