Easy Chocolate Rocky Road

Our Easy Milk Chocolate Rocky Road recipe can be put together in under 10 minutes! It is the perfect sweet no bake slice and both regular and Thermomix instructions are included.

Equipment

  • 1 large bowl
  • 1 x 20cm square baking dish

Ingredients

  • 540 grams milk chocolate 3 x blocks
  • 200 grams marshmallows chopped in half
  • 20 grams desiccated coconut ¼ cup
  • 120 grams raspberry lollies chopped in half
  • 75 grams peanuts ½ cup
  • 20 grams coconut oil optional

Instructions

  • Line a 20cm square baking dish with baking paper.
  • Break the milk chocolate into squares and place into a microwave safe bowl. Add the coconut oil if using. Cook for 30 second spurts until it has just melted.
  • In the meantime, add the remaining rocky road ingredients to a large bowl. Gently mix to combine.
  • Add the milk chocolate and stir through to combine with all of the ingredients.
  • Transfer to prepared baking dish and place into the freezer for a minimum of 2 hours to set.

Thermomix Instructions

  • Line a 20cm square baking dish with baking paper.
  • Break the milk chocolate into squares and place into the Thermomix bowl. Cook for 2 minutes, 50 degrees, speed 2 or until melted..
  • Add the remaining ingredients to the bowl and use a spatula to gently mix to combine.
  • Follow instructions above from step 5.
