Chicken Sandwich Filling

This simple Chicken Sandwich filling takes less than 15 minutes to prepare and will quickly become a family favourite! Perfect for picnics, parties, lunch boxes and everyday, you can store this chicken filling in the fridge for up to three days.

Ingredients

  • 500 grams Chicken Breast Shredded See notes for options
  • ½ cup Whole Egg Mayonnaise 130 grams
  • 4 stalks celery
  • 50 grams red onion ½ a red onion
  • ½ teaspoon salt optional
  • teaspoon pepper optional

Instructions

  • Finely chop the celery sticks and red onion and place into a large bowl.
  • Add remaining ingredients and gently fold until all ingredients are combined.
  • Add filling to favourite bread, rolls or wraps.

Notes

  • You can use leftover BBQ chicken, precooked chicken or poach your own chicken. If poaching your own chicken, roughly chop 2 chicken breasts into pieces (4cm big) and cook in boiling water for 12 - 14 minutes or until cooked through when tested. While still warm, use two forks to shred the chicken.
  • This recipe will make approximately 6 'regular' sized sandwiches. 
  • This recipe can be doubled or halved depending on your needs.
  • You can store this chicken sandwich filling in the fridge for up to three days.
