Homemade Peanut Butter and Honey Muesli Bars

Ingredients

  • 1 ½ cups 125g of rolled oats
  • 1 cup 40g of rice bubbles
  • cup 40g of wholemeal flour
  • ½ cup 40g of desiccated coconut
  • cup 90g of brown sugar
  • 1 cup of sultanas
  • 120 g of butter
  • ½ cup 130g of peanut butter
  • ½ cup 160g of honey
  • 1 teaspoon of vanilla essence

Instructions

  • Line a 28cm x 18cm slice tin with baking paper (making sure you leave plenty hanging over the sides) and preheat your oven to 170 degrees.
  • In a large bowl, add the rolled oats, rice bubbles, wholemeal flour, coconut and sultanas. Set aside until needed.
  • Place the butter, honey and peanut butter into a small saucepan and cook over a medium heat until melted and combined.
  • Once melted, reduce the heat to low and add the brown sugar and vanilla essence and stir to combine.
  • Pour the melted ingredients into the bowl with the dry ingredients and stir to combine.
  • Pour the mixture into your slice tin (don't worry it will be quite sticky) and push down with the back of a metal spoon to flatten.
  • Put the homemade Peanut Butter and Honey Muesli Bars into the oven and bake for 30 minutes or until golden brown.
  • Allow the muesli bars to cool in the tray for 20 minutes before transferring to a wire rack to cool completely.
  • Once completely cooled, cut into bars and store in an airtight container.
